When you only do tea for two

Cooking for Two can sometimes be more trouble than cooking for a tribe .I'm having to learn a new skill - how to cook for two.

I've been so used to cooking for a large family and various assorted friends that I'm starting over in trying out meals for just two people.

Here are some ideas for a dinner that's just the right amount for two. Bear with me while I test some more.

Suitable for Newer Cooks

When I started cooking, it was for two. I wished then, that I had paid more attention to what my mother was doing in the kitchen.

I learned to cook by trial and error, I had trouble following recipe books (half the ingredients were alien to me) and my mother was no longer here to give me advice. The meals I produced could be described, in the kindest possible way, as just edible. Many years and many children later, I discovered the joys of cooking.

Now that I'm cooking for two again, I can laugh at my earlier attempts and I know now that cooking for two can be just as rewarding as cooking for many

These recipes are for others who are just starting out. The recipes are simple, yet result in gourmet meals. You don't have to do anything fancy to be a good cook. All you need are good quality ingredients.

Freeze half a meal

Most recipes seem to serve four or six, but you only want a meal for two. Do you divide the recipe? No.

Prepare the whole dish from the recipe and divide that in two. Have half for dinner and place half in the freezer.

* Prepare a casserole. Freeze half of it unbaked.

* Soups and stews. Cook the dish and then freeze half..

What you need to freeze meals

Get in a good supply of freezer bags, foil, plastic wrap and don't forget a permanent marker..

The permanent marker is a very important tool in your kitchen. Label everything and don't forget to include the date you made it.

Plastic containers with lids are super handy too. You can attach sticky notes to the lids.

      I only cook for myself...so leftovers even in smaller batches is an inevitability. I do freeze leftovers though.

      I love freezing a batch of something on the weekend for dinner later in the week. It's a great idea even when cooking for one!

      Wonderful lensography of great recipes! I have been freezing 1/2 of what I cook for years now. It is really nice to just pull the leftovers out of the freezer. Of course, I do have to remember to do that :)
