I love my Slow Cooker. That's the only type of cooking I really do. This wonder appliance has saved many a family time and money. It's almost like magic. Add some meat, vegies, spices in the morning and when you get home from work, Voila, a delicious dinner for the entire family.
You've probably noticed that since the popularity of Pinterest the number of Crock Pot recipes seem endless. And for the most part they are nutritionally decent. But I have been on a health kick lately and am reinventing recipes to be the healthiest they can be.
This is my version of a recipe I found on Pinterest, Crockpot Orange Chicken. With my healthier alternative recipe I have saved approximately 200 calories per serving.
Add rice and a green salad and you have a very pleasing easy meal.
I hope you enjoy this meal as much as I did.
Ingredients
- 4 -5 Boneless Skinless Chicken Breasts
- 3/4 cup Smucker's Simply Fruit Orange Marmalade
- 3/4 cup Walden Farms BBQ Sauce
- 2 tbsp. low sodium Soy Sauce
Instructions
- Cook the chicken in the crockpot on high for 3 hours, covered. Drain liquid from crockpot. Mix together remaining ingredients. Pour sauce over chicken in crockpot and continue cooking covered until sauce thickens, 30 - 60 more minutes.
- Serve over rice.
