Everyone Loves Sweet Potato
Sweet potatoes are one of my favourite vegetables. They are not only one of the most versatile foods I know of (go on - try to think of something they wouldn't go well in or with), they are also incredibly good for you.
Usually foodstuffs that taste this good are Of food groups that you know you should limit - crisps, chocolates etc etc... But recently, I have been losing weight and gaining important vitamins and nutrients simply by adding the humble sweet potato to my dinner plate more often. Let me rave on about how great sweet potatoes are for just one more minute (promise!)
Did you ever hear about the Paleo diet? I hadn't heard if it until my mother started abiding by it religiously. Basically, it is a way of life which involves cutting out ALL processed food. If you couldn't eat it in caveman times, those following a Paleo diet won't eat it! Amazing, right? The thing is, my mum has heart problems and also MS and she was desperate for a way to combat her fatigue and different physiological problems. The Paleo diet has been a God send - she is brighter, happier and healthier than I have seen her in a long time, and sweet potato wedges are one of the many delicious things that are excellent in terms of health benefits (more on that later). I would recommend this dish to EVERYONE. It is cheap, delicious, nutritious and filling without being fatty... In fact a serving of these gorgeous wedges contains less than 100 calories. So go on - give them a go!

Health Benefits of Eating Sweet Potato
Sweet potatoes are an explosion of tasty, nutritional goodness! Everyone knows that to remain healthy, humans need a good dose of vitamins and minerals which can be obtained through foods, one of which is vitamin B6, which has been proven to reduce Homocysteine - a chemical within our bodies which has been linked to numerous degenerative diseases.
They are an excellent source of vitamin C. This is a crucial health element for this wanting to remain healthy as it is needed in order for the body to absorb the equally important vitamin D. A lack of either of these essential vitamins is very bad news indeed!
Eating sweet potatoes helps you maintain a youthful look! It's true! As mentioned above, they are packed full of vitamin C which helps our skin stay oxygenated and "elastic" - meaning, ultimately that it staves off ageing.
If you are feeling stressed out, anxious or tired, sweet potatoes are a wonder-food. They contain high levels of magnesium which boosts our energy levels and combats stress and anxiety. If you've had a really tough day at the office, I recommend an extra helping of sweet potatoes and a long soak in the bath - that'll get you back on track!
So the humble sweet potato may not seem so humble now! Yet another health benefit (if you really need more convincing) is the fact they are full of iron. Iron is another essential part of our bodies balancing act as it is needed to combat stress, boost our immune systems and aid in white blood cell production.
Eating sweet potatoes helps your entire system, including the heart, arteries, blood, bones, muscles, nerves and other vital organs and even if this isn't something you are concerned with, they taste amazing and are cheap and versatile. I hope this inspires you to eat more of them!
I first came across these recently when my mother (who is following the Paleo diet), made me some with lunch one weekend. They were so delicious that I made some for my fiancÃ© the next evening. We now have them at least twice every week.
The best part? They are virtually fat free!
- 2 sweet potatoes (one per person)
- 2 tsp olive oil
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- Salt and pepper

White potatoes don't count towards your 5 a day - but sweet potatoes do!
- First, preheat the oven to 200 degrees C
- Peel and wash the sweet potatoes
- Chop them into halves lengthways and then continue to chop these halves into wedge shapes
- In a food bag or bowl, mix together the herbs and seasoning, add the oil and combine well
- Add the sweet potato wedges
- Shake the bag or mix in the bill until each wedge is well coated in oil and seasoning
- Spread out evenly onto a baking tray and put into the oven to bake for 40 minutes. It is vital that the wedges are given enough space and do not overlap - if they are too close together they will steam, which results in soggy wedges!

Sweet Potato Wedges Make Excellent Children's Snacks
My toddler, aged 2 now, absolutely adores these wedges and they are flavoursome and sweet enough that your children probably won't smother them in ketchup (great news for those of us who are trying to cut back on the calories without cutting back on flavour).
