What you'll need:

3 small eggplants - 4 to 8 oz.each

2 minced garlic cloves

2 tablespoons olive oil

1 teaspoon dried basil

1/2 teaspoon dried thyme

1 teaspoon paprika

1/2 teaspoon hot pepper flakes, optional

Salt/pepper to taste

Preparing the eggplant:

Preheat grill to medium high.  Cut the eggplants in half - lengthwise, leaving stem ends in tact. Mix garlic and olive oil in small bowl.  Combine spices in separate bowl and stir to mix.  Lightly brush cut sides of eggplant with oil mixture and grill cut side down, until lightly browned - about 3 minutes.  Invert eggplants and brush skin tops with remaining oil.  Sprinkle tops with herb mixture.  Cook cut side up until tender, 6-8 minutes.  Voila'!! The end result is a delicious tasting dish to serve at your next BBQ!
