Kiwi Shortcakes a Dessert Recipe for Delicious and Nutritious Treats. Kiwi shortcake is a delicious and nutritious dessert recipe I make for my family. have always loved shortcakes and my mother taught me how to bake them when I was very young. When we made them we usually topped them with strawberries. Now for my family I make kiwi shortcakes which provides a good dose of vitamin C to all of our diets. Kiwis have a very high concentration of vitamins especially C and are said to have more than the tradition citrus drinks.

I like to keep on top of nutrition for my family, we eat a vegetarian diet and try to avoid artificial ingredients. I have loved to bake since the time I was little. My mother let me experiment in the kitchen on my own and I have come up with some very nutritious meals and desserts for my family. I usually try to look at old favorites and comfort foods from my childhood and improve on them.

I have become known as the baker among my siblings, but my older sister is also a very good cook and baker as well. I learn a lot from her and her creativity. Sometimes we create recipes together and on the holidays we generally prepare the feast for the entire family, mom, dad and all of the extended family. My mother didn't like to fuss too much on meals so she let my sister and I do all the fancy stuff. We had a wonderful time doing it and my father always appreciated the baked good we made for him.

Kiwi Shortcake Dessert Recipe

Kiwi Shortcakes

2 cups Bisquick baking mix ( Regular, Heart Smart or Gluten Free)

3 tablespoons sugar (or equivalent artificial sweetener)

½ cup skimmed milk

5-6 kiwi

Shortcakes

Add Bisquick and sugar to a large mixing bowl stir together, then add the milk to form a soft dough. Roll out the mix onto a floured surface and cut into round biscuits use a cookie cutter or the end of a glass. If you prefer you can hand roll the entire mixture into a long rounded tube. The simply cut the dough into 1 inch slices and place on a ungreased cookie sheet. Bake for 10-12 minutes in a preheated 450 degree oven until golden brown. Allow the biscuit to cool on a rack or wax paper.

Kiwi Topping

Peel 5-6 kiwis into slices or chunks into a bowl and gently bruise them with your hands or a spoon. This will bring out the juice. If you desire you may add 1-2 teaspoons of sweetener to the mix. Chill for a least 1 hour.

Whipped Topping

½ cup ice water

½ cup dry milk powder

1½ teaspoons of unflavored gelatin

2 cups of cold water

2 tablespoons boiling water

¼ cup confectioners sugar

1 teaspoon of vanilla extract

In a large chilled mixing bowl add ice water and milk powder and mixing beaters into freezer for 20-30 minutes. Place gelatin and cold water in a small mixing bowl and let it stand to 5 minutes, then add boiling water and stir. Cool this mixture to room temperature.

Remove chilled mix and beater from the freezer and whip until it forms stiff peaks. Add the gelatin mix sugar and vanilla extract. Continue to whip until completely mixed. Chill in refrigerator until served. If the mix looks watery stir and whip by hand until fluffy.

You may want to use the recipes on the side of the Bisquick box to create some more tasty treats.

Experiment with a dessert recipe

Quick and Easy Kiwi Dessert Recipe - Fresh Bananas

10 oz Cool Whip

1 small pkge. of cheesecake pudding powder

18 ounces vanilla yogurt

1 lb fresh. sliced kiwi fruit

3 bananas, sliced

1 1/2 cups miniature marshmallows

Thaw cool whip, then stir in yogurt and pudding powder place in the refrigerator to set, then add the marshmallows and the kiwi fruit. Add the bananas just before serving and enjoy.

If you don't want to fuss around the kitchen this is the dessert recipe for you. Any type of fruit can be substituted in place of the kiwis. How about strawberries, fresh peaches, or blueberries, you may even want to add different flavors of yogurt and pudding to your recipe. I usually use whatever we have in the pantry. Seasonal fruits are great or you may want to use drained canned fruit. I prefer the can fruit in natural juices. I don't like to add all of the sugars to this recipe, since it already has sweeten pudding mix and cool whip.

Take your time and experiment with some of your favorite fruits and pudding, I'm sure you will come up with one that you family will love.

      I'm all over this! Wish I'd thought of Kiwi Shortcakes before I ate my way through a couple dozen kiwi, eating them one at a time without enhancement. The next basket I get will go into shortcake for sure.
