Lavender Shortbread Cookies
Adding Flare to a Classic Cookie
The fragrant scent of lavender is good for more than your pillow sachet or your tea. It makes a great addition to one of our favorite cookies.
Traditionally, shortbread cookies have been a staple to the Christmas dessert platter but with the simple additional of lavender you can be enjoying shortbread cookies for any occasion.
If you already have a favorite shortbread recipe then just add two rounded tablespoons of English lavender flowers and you're good to go, otherwise see below.
The Ingredients
1 lb of butter, salted
1 cup icing sugar
4 cups of flour
2 rounded tbsp of dried English lavender flowers
The Directions
Let butter come to room temperature so it is easy to work with. Cream until light and fluffy. Continue beating while gradually adding sugar. Add sifted flour and lavender, mixing until combined.
Remove dough to floured surface and knead a few times into a formed ball. Roll out to desired thickness of cookies and use cutters to cut into shapes.
Place on cookie tray covered with parchment paper and bake in 325 degree F oven for approximately ten minutes. Remove as they begin to turn gold.
This recipe makes approximately 8 - 10 dozen cookies depending on thickness and type of cookie cutter.
