Lemon and Olive Oil Potato Salad

A Light and Fresh Twist on Potato Salad

I love potatoes and therefore, you might guess that yes, I love all types of potato salad. 

This recipe for Lemon and Olive Oil Potato Salad has become one of my favorites because it is light, fresh and the flavor is wonderful. I like that it is a bit unique from traditional potato salad and it's a dish that gets noticed.

If you can't locate small red potatoes for this recipe, small white ones will also do very nicely.


  • 2 lbs of small red potatoes cut in half
  • 1 tsp. salt
  • 1/3 cup olive oil
  • 2 tbls. lemon juice
  • 1 tsp. Dijon mustard
  • 1 tsp. salt
  • 1/4 tsp black pepper
  • 1/2 cup chopped green onions


  1. In a large saucepan, boil potatoes and salt until tender, about 15 minutes.
  2. Drain potatoes and let cool.
  3. In a small bowl, whisk together olive oil, lemon juice, mustard, salt and black pepper.
  4. Toss with potatoes and green onions.
  5. Serve warm or chill in the refrigerator.
