Have you ever woke up on a warm spring day and had a taste for a tasty bowl of soup well that is what happened to me the other day I woke up and wanted some lima bean soup so I decide to make me some and today I want to share with you the soup I made it’s a Bake Lima Bean & Ham Hock Soup that is really full of flavor.

Bake Lima Bean & Ham Hock Soup

Ingredients

2 cups of dry lima beans

Water

4 ham hocks

2 bay leaves finely chopped

1 large onion, chopped

1/2 of green pepper, small diced

1 pound of Italian diced tomatoes

8 ounces of tomato sauce

1 tablespoon of salt

1/4 teaspoon each of pepper and ground cloves

Methods

To get started working on this dish soak you’re a bean overnight then get ready to prepare this soup when you get up in the morning.

The next think in the morning drain the water from the beans then place the lima beans in a large soup pot and add fresh cold water the ham hocks, bay leaves and extra water if needed cover the beans and place on the stove bring to a broil then reduce heat and let the lima beans simmer for 45 minutes or until beans are almost tender.

After the 45 minutes of cooking and your lima bean are almost tender add the onion, green pepper, tomatoes, tomato sauce, salt, pepper and cloves. Mix until blended and pour into a large (4 quart) casserole.

Cover and bake in a 250 oven about 1 hour to make sure your ham hocks get fork tender. Remove meat from beans; chop meat and return to soup before you serve it. Bowl up and enjoy
