Goat Cheese Crostini with Fresh Cherry Relish

Whats is a Crostini?

Crostini in Italian means Little Toasts. It is an Italian appetizer consisting of small slices of grilled or toasted bread and toppings.

The toppings may include a variety of different cheeses, meats, and vegetables, or may be presented more simply with a brush of olive oil and

herbs or a sauce. Crostini is typically made using French or Italian baguettes and is often served with wine.

The history of the crostini is thought to originate in medieval times when it was typical for Italian peasants to eat their meals on slices of bread instead of using ceramics

Goat Cheese Crostini with Fresh Cherry Relish

If you are a goat cheese lover then this will surely be a recipe to love. The cherry relish can also be served over chicken breasts or thighs.

The Recipe.......................

Serves 6

Ingredients

1) 1 Cup of fresh sweet cherries pitted and chopped

2) 1/2 cup of finely diced jicima

3) 1 medium scallion sliced very thin

4) 1 tsp fresh mint chopped

5) 1/2 tsp red wine vinegar

6) Pinch of cayenne depending on taste

7) Sea salt and freshly ground pepper

8) 1/3 cup of soft fresh goat cheese

9) 1/3 cup ricotta cheese

10) 18 1/2inch thick sliced baguette slices toasted

Prepare it..................................

In a medium bowl combine the cherries, jicima, scallion, mint, vinegar and cayenne. Season to taste with the salt and pepper.

In a small bowl combine the goat cheese, ricotta cheese and a pinch of salt and pepper to season.

Lightly spread the cheese over each baguette toast and top with the cherry relish.

If its not goat cheese.....Then blue cheese is the next best cheese.

The Recipe.................

Ingredients

1) 1 Shallot thinly sliced

2) 2 tsp olive oil

3) 1 (12oz) package of frozen dark sweet pitted cherries

4) 2 tbsp balsamic vinegar

5) 2 tbsp honey

6) 1/4 tsp fresh chopped rosemary

7) 1/8 tsp sea salt

8) 1/8 tsp pepper

9) 2 cups loosley packed arugula

10) 16 1/4inch thick ciabatta bread sliced and toasted

11) 8oz wedge blue cheese (or goat cheese if you prefer)

Time to make it...........................

Heat the oil on stove over medium heat. Saute shallot 2 to 3 minutes or until tender. Add cherries and any liquid from the package. Add vinegar, honey, rosemary, salt and pepper. Cook stirring occasionally to 8 to 10 minutes or until thickened. Let stand 10 minutes.

Assemble.....

Divide the arugula among the toasted bread slices. Top each with the cherry mix and 1 blue cheese slice.
