An Easy Breakfast Sandwich that's Better than Pastry

The breakfast pastry case can be tough to resist when you want something sweet for breakfast. But, we all know we should be eating better and choosing low fat, nutritious foods. If eating healthy has meant your breakfast consisted of dry toast or twigs and sticks in a bowl, here's some good news. This quick and easy little sandwich will taste like it's from the pastry case, but it could well be more nutritious than what you're eating for breakfast, now! (And, it's not just for breakfast. It makes a tasty dessert, too!)
What sweets most often call your name at breakfast time?
For One Serving
2 slices whole grain bread
1/2 ripe banana
1/2 tablespoon almond butter (optional)
1 tablespoon apple butter
Toast the Bread
Use your favorite quality whole grain bread. If you can find a multi-grain raisin nut bread, so much the better. When we first began making these sandwiches, we used Natural Ovens Happiness Bread (which, sadly, the bakery no longer makes). If it's been a while since you've toasted bread that contains fruits and nuts, keep an eye on it - the addition of dried fruit can cause the toast to burn more quickly.

Prepare the Banana
While the bread is toasting, slice the banana. Cut the banana in half across the middle and then slice one half lengthwise. Reserve the other half of the banana for another use. Or, nibble on it while you wait for your toast.
Add Almond Butter (optional) and Apple Butter
If you choose to use almond butter, spread it on each piece of the warm toast, first. Then, spread each slice of toast with apple butter. Try to work quickly so the toast stays warm.
Add the Banana
Arrange the banana slices on one slice of the toast, on the apple butter. Cover the banana slices with the other slice of toast, apple butter side down.
Slice and Enjoy!
Slice the sandwich (or not) and savor your healthy and tasty creation. The sandwich is nicely portable and you can easily wrap it in foil to go with you.
