I have used my kitchen mandoline slicer to:
1) Thinly slice cabbage for coleslaw
2) Make uniform slices of eggplant for Eggplant Parmesan
3) Slice green tomatoes for frying
4) Slice potatoes for french fries
5) Slice potatoes for waffle fries
6) Create thin cucumber chips for dips and salads
and last, but not least---
7) Make cute, wavy carrots so grandchildren will eat them
What is the most attractive feature of my mandoline? It can go in the dishwasher!
What accessory do I recommend? A cutting glove!

I really do recommend that if you have a mandoline slicer you NEED a mesh cutting glove. I nearly sliced the end of my thumb off one day when slicing cabbage. Do buy one, please.
