Our Family Recipe For Minestrone Soup


Minestrone Soup is one of my family's favorite vegetarian recipes! Our Minestrone Soup recipe has evolved over the years as we've added new veggies to it and adjusted the seasonings. This soup recipe is flexible enough that if you are having someone over for dinner who doesn't like carrots, for example, you can leave those out and the soup will still be fantastic!

So go grab your soup pot, some fresh veggies, and your cutting board, and let's get started!

Use fresh veggies in your Minestrone soup, when available!


Using fresh vegetables, rather than frozen, is key to making a delicious Minestrone Soup. I do usually use canned corn and canned tomatoes, but if corn is in season and you have the time, corn cut fresh from the cob would be quite delicious!

If I have cooked dried beans on hand, I use those. Otherwise I use canned beans. Everything else I use is fresh or, in the case of the herbs, dried.

Minestrone Soup Recipe

Ingredients

  • 1 cup chopped onion
  • 1 bell pepper - diced
  • 3 cloves chopped garlic
  • 1 tsp oregano
  • 1 tsp basil
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 5 cups water
  • 1 potato - peeled and cubed
  • 1 small carrot - sliced (optional)
  • 2 zucchini - cut in half lengthwise and then sliced
  • 1 can navy beans - rinsed and drained
  • 1 can red kidney beans - rinsed and drained
  • 1 can corn - drained
  • 2 14.5 oz cans whole tomatoes
  • 1 tablespoon dried parsley
  • 1 cup uncooked ziti or other pasta (I use wholegrain pasta.)
  • Oil for sauteing

Instructions

  1. Cut the onion and saute it over medium heat in a little oil in a large soup pot. Covering the pot with a lid helps the onion cook more quickly.
  2. While the onion is cooking, cut the bell pepper and garlic, add them to the pot and continue sauteing the vegetables.
  3. When the onion and bell pepper are soft, add the garlic, basil, salt, oregano, and pepper.
  4. Cook covered over low heat for 10 minutes, stirring often.
  5. Add 5 cups of water and turn the heat up to high. Add the sliced zucchini, potatoes and carrots, as well as the corn and beans. After the water comes to a boil, reduce the heat to low and cook for ten minutes.
  6. During these ten minutes, add the juice from the tomatoes to the soup pot and either slice the tomatoes on a plate or give them a few whirls in a food processor. Add the tomatoes, the parsley, and the uncooked pasta and cook until the pasta is ready and the potatoes are tender.

Low Carb Version Of Minestrone Soup

If you'd like a low carb version of my Minestrone Soup Recipe, leave out the pasta and corn, and substitute half of a rutabaga in place of the potato! I tried my Minestrone soup last night with a rutabaga in place of the potato, and liked the soup even more!

      @anonymous: Yes! Are just leave out the pasta entirely! When I make minestrone soup for my family and relatives, I cook the pasta in a separate pot. Those people who want the pasta can spoon some in their bowl, and those who don't, can leave it out. I don't miss the pasta in mine at all!

      Mmm, there's nothing like a good minestrone soup when you're sick. I like to use fresh cut vegetables too (extra carrots for me). I also like to add some bell peppers for a little spice too. For bread, it's gotta be day old Italian for me.

      I love soup and minestrone is one of my favorites. I always pour hot soup over the cooked pasta in the bowl because I hate it when the pasta gets mushy in the pot. Great lens. You really did a god job on it. I have lensrolled it to my Hawaiian Portuguese Bean Soup.

      Your Minestrone looks delicious! The worst thing about visiting a delicious lens like this is not being able to reach into my computer screen with a big spoon. I've always loved minestrone although I usually use cannellini or great northerns instead of navy beans...but the rest of your recipe is similar to the way I make it.
