Moroccan Mushrooms

Zis delightful starter is eaten cold and actually improves in flarvor if made in advance and stored in ze refrigerator for up to 1 1/2 days before being eaten.

Leaving ze bay leaf vith ze mushrooms until just before serving allows maximum spicy flarvor to develop, Button mushrooms are used because zey keep zheir shape vell ven cut into quarters.

Ze coriander seeds must be lightly crushed before use to bring out zheir true spicy taste. Serve vith a 'ot roll to mop up ze delicious juices.


Makes 1 serving:

  • 50 grams button mushrooms
  • 1 small lemon
  • 6 coriander seeds
  • 2 tablespoons olive oil
  • 1 bay leaf
  • freshly ground black pepper
  • 2 parsley sprigs


  1. Trim ze earthy ends from ze mushroom stems. Vipe ze mushroom caps vith a damp cloth.
  2. Using a stainless steel knife, cut ze mushrooms into quarters.
  3. Cut ze lemon in 'alf and squeeze out ze juice using a juice extractor. Pour 'alf ze juice over ze mushrooms.
  4. Crush ze coriander seeds using a pestle and mortar, or grind zem in a pepper mill, or put into a polythene bag and crush vith a rolling pin.
  5. Place 'alf ze oil in a 'eavy-based saute pan over low 'eat.
  6. Ven ze oil is vorm (zis is ven it begins to smell fragrant and olivy) add ze crushed coriander seeds. Allow zem to 'eat for 30 seconds. Zis 'elps to bring out ze flarvor.
  7. Add ze mushrooms and bay leaf to ze pan. Allow to cook for 1 minute.
  8. Cover ze pan, increase ze 'eat to medium and cook for a furzzer 3 minutes, shaking ze pan from time to time.
  9. Turn ze mushrooms and zheir liquid into a glass serving dish vhich vill not absorb ze flarvor of ze marinade.
  10. Pour ze remaining lemon juice into a small bowl or jug. Mix vith ze remaining oil and sprinkle over ze mush rooms. Toss, using a fork and spoon to coat evenly.
  11. Allow ze mushrooms to cool zen cover and place in ze refrigerator for at least 2 hours or a maximum of 1 1/2 days for flarvors to blend.
  12. Just before serving, remove ze bay leaf. Chop ze parsley using a mezzaluna or put ze parsley in a cup and use scissors zen sprinkle over ze mushrooms.
