Yummy Butter Chicken
Whenever my mother makes butter chicken it is fully consumed.She is always satisfied and happy after cooking it.Her reaction is-it was worth cooking.My mother does not cook alone,I help her throughout the making.The aroma and flavour of butter chicken is unique in itself.It has a long lasting aroma and flavour.It is delectable.It is very light in taste and creamy.Even the last bits left on finger or spoon leave a lasting impression on mind.It is good with kids as they like it.It is one of their favourites as it is light in taste.It is nutritous for them.
Firstly marinade the chicken in curd,ginger paste,garlic paste,red chilli powder and salt.These pastes are readily available in market.so no need to fret.Butter chicken is prepared in tomato gravy.Buy some tomato puree.The amount of tomato puree should be the same as the weight of the chicken.Prepare cashew paste after having soaked it in water for at least half an hour.Prepare a paste of five green cardamoms,a few cloves,cinnamon sticks,ginger garlic.Mix the two and strain it.Put the degchi on the fire,heat oil,add red chilli,salt and garam masala.Add the cashew paste.Add the puree and bring the preparation to a boil.Pour some whipped cream for glazing.
Make three slashes each on the breast and thighs,and two on the drumstick.Cover and marinade for half hour in ginger garlic paste,red chilli paste,lemon juice,curd,and half of all the dry masala powder.Meanwhile cook tomatoes with green chilli for 30 minutes.Pass this mixture through a blender and cook for 30 minutes,till it forms a smooth puree.
Skew marinated chicken and cook for 10 minutes till half done.Remove and cut into 8 standard pieces.In a frying pan,add butter to the half cooked chicken,along with salt,pepper,cream,garam masala,kasoori methi,khoya and sugar.Cook till the chicken is done.Garnishing is important as it makes the chicken more delightful.It is an appetizer.In garnishing use cream and coriander and serve.

- 450-550 gms chicken
- 20 gm ginger paste
- 20 gm garlic paste
- 10 gms red chilli paste
- 240 gms tomatoes
- 20 ml cream
- 10 gm khoya
- 5 gm sugar
- 3 gm pepper
- 5 gm garam masala
- 3 gm kasoori methi
- 2 green chilli
- 10 gm coriander, chopped fine
- 60 gms curd
- 8 ml lemon juice
- 5 gms red chilli powder
- 120 ml butter
- salt to taste
- When chicken is brown in color then add cream.
- Degchi is a pot traditionally made of brass or copper.A deg is a bigger version of handi.

Marinate fish for 15 minutes.
Mix 1 tbsp semolina and 2 tbsp rice flour dried.Coat each piece with this dry mixture and deep fry.
Serve with green chilli sauce and onion rings.
