Dad's Favorite Delicious Baked Pork Chop Dinner

These baked pork chops may just hit the right taste bud for you! I just created this recipe last night and want to share it with you, because it was a hit here! It will definitely be on the Father's Day menu. My husband has never met a pork chop he didn't like.
This has to be one of the world's easiest dinners to make. It takes about 5 minutes of prep time and 2 hours (at least) of baking time. Perfect for a slow cooker recipe, all day on low!
So let's get cooking!

The Shopping List...
4 or more nice Pork Loin chops
1 large can sweet potatoes (or fresh yams, peeled and cut up)
Pancake Syrup, regular or sugar free
Yellow Mustard
Brown Sugar
Montreal Steak seasoning
How To Make The Magic...
Preheat your oven to 350
Optional First Step: Brown or briefly grill your pork chops. I put mine in the George Foreman for a couple minutes, just enough to brown the outsides. It's not necessary but makes a more attractive dish, I think.
Spray baking pan with olive oil spray or other cooking spray.
Arrange pork chops in baking dish. Salt and pepper to taste and sprinkle top liberally with Montreal Steak seasoning.
In a small bowl, prepare your glaze:
-One cup light brown sugar
-1/2 cup pancake syrup
-a 6" squeeze of yellow mustard
Mix glaze thoroughly and set aside.
Drain the sweet potatoes and arrange in dish around pork chops.
Pour glaze over everything
Seal pan tightly with cover or aluminum foil
Bake in 350 oven for 20 minutes. Reduce heat to 225 and bake for at least one hour, the longer the better! Do not open lid or foil during cooking process, you want to retain all the moisture.
Your chops will be tender and delicious with a mysterious sweet/spicy flavor.
Healthy Cooking Tip: If you prepare this dish with sugar free pancake syrup and Splenda brown sugar, you are adding virtually no calories for this rich sweet glaze! Guilt-free eating!

The Most Important Thing
Don't open the covering to "peek" at the chops during baking. You want all the moisture sealed in to steam that flavor into the chops and sweet potatoes.
