Nasi Jamblang - Makanan Khas Cirebon


Bila anda mampir ke Kota Cirebon, jangan lupa mencicipi makanan khas Cirebon yang disebut dengan Nasi Jamblang atau Sega Jamblang.

Sebenarnya, sega jamblang ini adalah nasi dingin yang dibungkus daun jati, kemudian dimakan bersama dengan lauk-pauk khasnya seperti rendang kecap, tahu air, sate kentang, sambel goreng, paru goreng, perkedel kentang, ikan asin, telur jamblang, cumi hitam, tempe, tahu, sate usus dan lain-lain.

Berikut ini adalah resep2 lauk-pauk sega jamblang. Saya akan menambahkan resep perkedel kentang, sate kentang dan telur jamblang dalam bulan ini.

Jamblang Rice is rice wrapped in a teak leaves, then eaten together with its delicious side dishes like sweet soy sauce rendang, tofu, potato satay with dry cocoonut, fried sambal (chili), potato fritters, salted fish, jamblang eggs, black squid, tempeh, and many more.

Here are some of the recipes of Jamblang's favorite side dishes that I love to make myself.

Resep Rendang Kecap

Rendang kecap khas Jamblang ini rasanya sedikit berbeda dengan rendang yang biasa kita makan. Perbedaannya terletak di rasanya yang manis dan rendang ini tidak memakai santan. Jadi cukup sehat untuk kita2 yang menghindari makanan pemicu kolesterol.

Pembuatannya sangat mudah, dan rendang kecap adalah salah satu lauk-pauk yang harus menemani sega jamblang.

BAHAN:

- 500gr daging sapi bagian paha, potong 4 x 4cm

- 1 tangkai serai, memarkan

- 4 lembar daun salam

- 75cc kecap manis (atau sesuai selera)

- garam & merica secukupnya

- 400cc air hangat / panas

Bahan untuk dihaluskan:

- 6 bawang merah

- 3 bawang putih

- 1sdt ketumbar

- 3 kemiri

Cara Membuat:

1. Tumis bumbu halus, serai dan daun salam hingga harum

2. Masukkan daging sapi, tumis hingga berubah warna

3. Tambahkan kecap dan garam, aduk rata.

4. Tambahkan air, masak hingga daging empuk dan air menyusut sampai kira2 100cc.

5. Angkat.

Resep Tahu Air

Tahu air jamblang paling enak disantap hangat2. Dengan sedikit kuahnya yang manis dan agak pedas, tahu air ini sangat mudah dibuat. Tips saya, cari tahu kecil2 seperti tahu sumedang (kulitnya coklat dan dalamnya agak kosong). Jika tidak bisa menemukan tahu sumedang kecil, bisa pakai tahu biasa tapi digoreng dulu hingga sedikit kering.

Bahan:

- 20 tahu sumedang kecil2 atau 10 tahu, potong 3 x 3cm dan goreng hingga kecoklatan

- minyak untuk menggoreng tahu

- 20cc kecap manis (atau sesuai selera)

- kol - iris tipis2 (sesuai selera)

- cabe rawit merah atau cabe keriting, iris serong tipis

- 7 bawang merah, iris tipis

- 3 bawang putih, iris tipis

- 200cc air hangat / panas

- garam & merica

CARA MEMBUAT:

1. Tumis bawang merah, bawang putih dan cabe hingga harum

2. Masukkkan tahu, tumis sebentar

3. Tambahkan garam, merica & kecap, aduk sebentar.

4. Tambahkan air, aduk rata. Lalu tambahkan kol.

5. Setelah kuah agak kental, angkat & sajikan.

Resep Sambel Goreng

Sambel goreng Cirebon rasanya agak manis, tetapi masih tetap pedas mengigit. Banyak yang menambahkan tetelan atau daging kecil2 ke dalam sambel goreng ini, tetapi saya lebih suka sambel goreng biasa, tanpa daging. Persiapannya cukup memakan waktu, karena harus memotong cabe tipis2, tapi cara membuatnya sangat mudah.

NOTE: berdasarkan pengalaman pribadi, sebelum anda memotong cabe, olesi tangan anda dengan minyak sayur. Ini untuk mencegah tangan anda menjadi panas. Tapi jangan olesi terlalu banyak, nanti tangan anda jadi terlalu licin.

Bahan:

- 10 cabe keriting, iris tipis (atau sesuai selera)

- garam & gula

- minyak sayur

Bumbu Halus:

- 3 cabe keriting

- 5 cabe rawit merah (kalau tidak suka terlalu pedas, jangan pakai cabe rawit merah)

- 2 bawang merah

- terasi bakar (sesuai selera)

CARA MEMBUAT:

1. Tumis bumbu halus hingga harum

2. Tumis cabe iris dengan bumbu halus hingga rata & harum

3. Tambahkan gula & garam, aduk rata. Angkat.

Makan Sega Jamblang

Jika anda baru pertama kali makan sega jamblang, anda mungkin bingung. Karena biasanya, di warung-warung yang menjual nasi jamblang itu, hanya tersedia bangku2 panjang, tanpa meja. Dan tidak ada orang yang akan melayani anda. Istilahnya sih "self service". Kecuali orang yang akan menawarkan minuman, biasanya saya akan pesan the botol dingin.

Nah bagaimana cara memesan sega jamblang?

Pertama-tama, kita langsung aja ke bagian nasi - pasti kita akan liat gunungan nasi yang dibungkus daun jati. Nasi ini porsinya kecil, hanya segenggam tangan orang dewasa. Biasanya, saya memesan 4 - 5 nasi.

Lalu, kita ke bagian lauk-pauk. Di meja akan berjejer lauk-pauk khas yang akan menemani sega jamblang anda. Anda bebas mo ambil berapa saja, tetapi anda harus ingat lauk-pauk apa saja yang anda ambil dan berapa banyak. Contohnya: 2 rendang kecap, 1 sambel goreng, 1 paru, 3 sate kentang, dsb.

Setelah anda selesai mengambil lauk pauk, anda bisa datang langsung ke kasir, lalu bilang berapa byk lauk yg anda ambil. Dia akan mencatat sega jamblang anda dan nanti jika anda sudah selesai makan, tinggal bayar. :-) Tentu saja anda bisa tambah lauk pauk & nasi, tapi ingat untuk lapor ya ke kasir.
