Celebrating Waffle Day & My BirthDAY :)

It's time to celebrate: I love waffles and was happy to learn that waffle day is actually celebrated on my birthday. What better reason to have waffles for breakfast and ice cream in a waffle cone for dessert after lunch... and dinner :)

Waffles are yummy with strawberries and whipped cream but they also go great with a full breakfast including bacon, eggs and orange juice. My mouth is watering just thinking about them now.

Have you ever made your own waffles? It's pretty easy once you have a waffle iron. I have a great recipe to share with you so get your waffle iron ready, grab some waffle cones and your favorite ice cream and join me in celebrating Waffle Day and my next birthday!

Waffles vs Pancakes - Let the breakfast food war begin!

I love the extra crunch of a waffle, pancakes are good too but I'll choose waffles over pancakes every time. What do you think, is it a no-brainer for you as well or do you think they're both great and will take whichever one is ready first?

I also definitely prefer the toasted frozen waffles over microwaved mini-pancakes... so Leggo my Eggo and get your own waffles below.

  • Prep time: 10 min
  • Cook time: 10 min
  • Ready in: 20 min
  • Yields: 4

Ingredients

  • 2 cups all purpose flour
  • 4 tsp baking powder
  • 1//2 tsp cinnamon
  • 1 tsp salt
  • 1 1/2 tbsp brown sugar
  • 3 tbsp melted butter
  • 2 eggs separated
  • 1 1/2 cups milk
  • 1 tsp vanilla essence

Instructions

  1. Mix the dry ingredients together and set aside. Beat the egg whites until they are stiff and form peaks. And remaining ingredients to the flour mixture and blend but do not over-mix as it will make the batter too firm. Fold in the egg whites, spray a little cooking oil onto the plates of your preheated waffle iron, pour enough batter to cover the plate and bake according to the directions for your specific waffle iron. Remove with a plastic utensil so you don't damage the teflon plates and serve with your favorite toppings or side dishes - Presto: home-made waffles are a cinch!

        I crave waffles and go in stages, but shouldn't ever because of the gluten, but these look soooo good.

      Waffle Sundaes are the perfect dessert!

      Have you ever had one? The best one I had was at Blizzard beach in Disney World, but they're absolutely delicious wherever you are. All you need is your favorite ice cream, fruit, toppings and syrup and you've got the best dessert ever - owl or cone, it really doesn't matter but ordinary cones don't even come close to the flavor and texture of a freshly made waffle cone.

      I'll be having mine with coconut ice cream, chocolate chips, gummie bears and chocolate syrup - mmmm so good!!!

      Waffle cones and bowls are the best - why not try making your own!

          I love trying new recipes out with my waffle maker. So far my favorite was cornbread waffles with chili on top. Yum.!
