Yields: 1 dozen muffins


  • 1 1/2 cups oat bran
  • 1 cup all-purpose flour
  • 1/2 cup raisins
  • 1/2 cup fat free milk
  • 1/4 cup honey
  • 1/4 cup applesauce
  • 1 beaten egg
  • 2 tablespoons cooking oil
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • non-stick cooking spray


  1. Coat the cups of a standard muffin pan lightly with non-stick cooking spray.
  2. Combine the oat bran, all-purpose flour, baking powder, baking soda, and salt in a medium size bowl. Form a well in the middle of this dry mixture, and set the bowl to the side.
  3. Mix the milk, honey, applesauce, beaten egg, and cooking oil together in a small bowl. Pour this liquid mixture into the well of the dry mixture and stir just until moistened (the batter will be lumpy). Fold the raisins into the lumpy batter.
  4. Spoon the muffin batter into the cups of your muffin pan; filling each cup 2/3 of the way full.
  5. Bake the muffins for 15 to 17 minutes in a preheated 400 degree Fahrenheit oven (or until golden).
  6. Prior to serving, allow the muffins to cool for 5 minutes on a wire rack.
