Today I woke up and I had a taste for some eggs but I was in a hurry because I slept a little later than I usually do so I decided to make me some eggs for dinner when I came home this evening and when I came home I did just that but to be honest I wanted to make it more than just some eggs so I decided on a Western Omelet but I wanted to keep it healthy.
So what I did I went to my refrigerator I grab out some red and green bell peppers, some turkey bacon and I also had a few cooked potatoes so I decided to dice up this items grabbed y egg beaters whipped them just a little bit added a pinch of tarragon then set to the side so I could start putting this Omelet together.
Using a 8 inch nonstick fry pan add 1tablespoons of margarine and lightly sauté the peppers, potatoes and the bacon using a medium heat for about 2 minutes then remove from the pan keep warm on the side now using the same pan add another tablespoon of margarine to the nonstick fry pan then add your egg beaters and let it cook until you see the starting to really form then spoon the vegetable mixture over one side of the omelet flip it over to make it a half moon then slide it on to your plate and enjoy.
