Get Creative with Your Oatmeal

When I first came across Melissa King's My Whole Food Life blog I had no idea that I would become an oatmeal for breakfast convert. For the last fifteen years or so breakfast, for me, consisted of two slices of whole wheat toast with smooth peanut butter. Occasionally I would switch things up with a poached egg and about five years ago smoothies became a necessary part of my morning. I've never been a cereal for breakfast kind of person and only ate oatmeal occasionally, usually if I was sick.

I had been wanting a change and Melissa's article with ten overnight oatmeal recipes came at the right time. I tried them all. Before I knew it I was addicted to oatmeal for breakfast. Here it is four months later and I am still eating overnight oatmeal for breakfast and experimenting with new flavors.

What is overnight oatmeal? Basically it's taking a serving of oatmeal, adding some fluid and other special ingredients in a single serving container and letting it sit in the fridge overnight. It can then be eaten cold in the morning right from the container or it can be heated in the microwave.

The Basic Directions

In its very basic form Overnight Oatmeal is 1/2 cup of oats and 1/2 a cup of fluid. That is super easy to remember but kind of boring. What makes overnight oatmeal yummy and fun is all the possibilities of other things to add.

This is probably my favorite of all the overnight oatmeals I eat. I have made it with both fresh and frozen strawberries.

Cook Time

Prep Time: 10 minutes or less

Serves: 1

Ingredients

  • 1/2 cup rolled oats (or steel cut)
  • 1 tablespoon shredded coconut
  • 2 teaspoons chia seeds
  • 1 chopped date
  • 1/2 cup skim or almond milk
  • 1 large sliced strawberry or about five frozen pieces

Instructions

  1. I always start with adding my dry ingredients so oatmeal, spices, etc. then add my wet but it really doesn't matter because it all gets mixed well together. I do however like to put my fruit, especially if it is frozen in last and usually just spread out on the top and not mixed in. I just like the way it looks when I open it up and see the fruit there.
  2. Put all ingredients in your container whether it be a jar or a large ramekin like I use. Stir well. Add fruit, cover and put in fridge overnight.
  3. In the morning I take it out and sit it on the counter while I am doing other things. When I am ready to eat I like to heat it in the microwave for 1 1/2 minutes then add a little more milk.

When I first tried overnight oatmeal I used what I had on hand which was quick oats. They make an acceptable breakfast and if that is all you use then you won't know any better but once you go rolled it is hard to go back to quick oats (because they turn out so mushy). I like to switch between rolled oats and steel cut oats. I usually make two overnight oatmeals at a time with the same recipe except one container will have the rolled oats and the other will have the steel cut.

Ingredients

  • 1/2 cup rolled oats (or steel cut oats)
  • 1 teaspoon chia seeds
  • 1 tablespoon dried goji berries
  • 1 tablespoon sliced almonds
  • 1 teaspoon coconut sugar (optional)
  • 1 chopped medjool date
  • 1/2 cup skim milk (or almond milk)

Instructions

  1. Mix all ingredients together in your chosen container. Because the goji berries are dried I mixed them in with the oatmeal to absorb some of the fluid instead of leaving on top like fresh fruit. Apply lid, and refrigerate overnight.
  2. Eat as is the next morning or heat in microwave for 1 1/2 mins.

Where to Buy Oats

I have tried rolled oats from the Bulk Store and they are not as nice looking as Bob's Red Mill but still taste as good. Bob's can be found in the organic section of grocery stores or online at Amazon.

Ingredients

  • 1/2 cup rolled oats (or steel cut oats)
  • 1 tablespoon shredded coconut
  • 1 teaspoon chia seeds
  • 1 tablespoon raw pistachio seeds
  • 1/2 cup skim milk (or almond milk)
  • 1/2 teaspoon maple syrup

Instructions

  1. Mix all ingredients in your container of choice, cover and refrigerate overnight.
  2. Microwave for 1 1/2 minutes when ready to eat. Eat as is or add a little more milk.

I never know what I am going to put together until I have my empty overnight oatmeal containers in front of me but there are certain staples I like to always have on hand.

  • Apple Butter
  • Flax Seed Meal
  • Shredded Coconut
  • Cocoa
  • Sliced Almonds

Candied Ginger Overnight Oatmeal

Ingredients

  • 1/2 cup rolled oats (or steel cut oats)
  • 1 tablespoon of shredded coconut
  • 1 teaspoon chia seeds
  • 1 teaspoon flax meal
  • 1/2 dis of candied dried ginger

Instructions

  1. Mix all ingredients together in container of your choice, cover and refrigerate overnight.
  2. When ready to eat heat in microwave for 1 1/2 minutes. Eat as is or add a little more milk

Blueberry and Almond Overnight Oatmeal

Ingredients

  • 1/2 cup rolled oats (or steel cut oats)
  • 1 tablespoon shredded oatmeal
  • 1 teaspoon chia seeds
  • 1 tablespoon sliced almonds
  • 1/2 cup skim milk (or almond milk)
  • 1/2 teaspoon vanilla extract
  • 1/3 cup frozen wild blueberries

Instructions

  1. Mix everything but the blueberries in container of choice, sprinkle blueberries on top, cover and refrigerate overnight.
  2. Heat in microwave for 1 1/2 minutes and eat as is or top with some more milk.

  • 1/2 cup rolled oats (or steel cut oats)
  • 1 teaspoon of chia seeds
  • 1 teaspoon of flax meal
  • 2 teaspoon of cocoa
  • 1 teaspoon of maple syrup
  • 1/2 cup skim milk (or almond milk)
  • 5 ripe cherries cut into quarters and pits removed

Instructions

  1. Mix everything but the blueberries in container of choice, sprinkle blueberries on top, cover and refrigerate overnight.
  2. Heat in microwave for 1 1/2 minutes and eat as is or top with some more milk.
