Gluten Free Peanut Butter Chocolate Chunk Cookies That Everyone Will Love!

This is a wonderful and easy recipe for gluten free peanut butter chocolate chunk cookies. They are filled with chocolate chunks and they are so full of flavor. The whole family will love them, even if they don't have to follow a gluten free diet.

These cookies are made with only a few ingredients. I didn't miss the flour in them at all. I'm not sure how they taste so much like the flour version but I don't question goodness!

Warm Homemade Cookies are the Best

These easy homemade peanut butter cookies don't require many ingredients. All you need is 2 cups of peanut butter, 1-1/2 cups of well packed brown sugar, 2 large eggs, 2 teaspoons of baking soda and chocolate chunks (I use Nestle chocolate chunks).

Is Peanut Butter Gluten Free?

In case you were wondering, peanut butter is naturally gluten free. Most brands are simply made with peanuts, salt and oil - all gluten free ingredients. However, please make sure that you check each brand, every time, because sometimes they put extra ingredients in it that might not be gluten free and sometimes they use the same equipment that they use on non-gluten free foods. You can also check the different websites to make sure. Most companies will have a site with a statement about whether a product is gluten free or not.

Put It All In Together

Put all of the ingredients into a mixing bowl and mix it all up! I heard that it's best to use eggs that are warmed to room temperature but mine came straight from the refrigerator and my cookies still turned out great. Don't over mix. Only mix until all of the ingredients have been combined.

I Love My KitchenAid Mixer

I never thought that I would love a mixer as much as I love my KitchenAid. It's an older model that I received as a gift. I'm dreaming of the day when I get a new one! I use it to make cookie dough, brownies, cakes and my favorite - homemade whipped cream!! I'll never go back to the frozen or spray variety. I always make my own now. So easy with this mixer! I even discovered by accident that I can make my own butter with it. Now that's power!

I love my KitchenAid mixer!! There's so much that you can do with the basic attachments and so much more with the extra attachments that you can buy! They even come out with new ones every year. A mixer is just a mixer until you try a KitchenAid. It's a great addition to any kitchen.

Mmmmm... if you're a chocolate lover like myself, you'll love the addition of chocolate chunks! I think these cookies would be great even without the chocolate but it gives it an irresistible flavor. If you eat them while they're still warm, the chocolate is rich and creamy and melts in your mouth. It really adds the great taste to these cookies.

The cookies should be baked at 350 degrees F for 10-12 minutes on an ungreased cookie sheet.

Make sure to try these cookies while they're still warm. The chocolate is extra delicious when it's all melted.

Pampered Chef Stoneware

I've had my Pampered Chef Stoneware Bar Pan for a long time. I use it as a cookie sheet but it's made perfectly for all your favorite bars. It always cooks evenly and I don't very often burn things on it. Sometimes things don't look like they're done but food will continue to cook on the pan for a little while after you take it out of the oven.

This very small bar pan cooks evenly and thoroughly. It's one of my favorite kitchen items! I use it for making small versions of all of my favorite cookies and bars. It doesn't over cook them and they have a great flavor after cooking. Since it's so small, I don't eat too much! You can buy this same pan in a bigger size which is what I use to make cookies and other bars. My is well seasoned and cooks everything really nicely. I would definitely recommend it but it's pretty heavy.

Finishing Touches

Before I bake the cookies, I criss cross them with a fork and then add sugar on top. The criss crosses make the cookies bake more evenly and the sugar just tastes great on top. If there's a holiday nearby, I will use colored sugars to match the season.

These cookies are great for any time! I love taking them to work for a snack, if there's any left by morning that is! The other good thing about them is that most people won't even realize that they're gluten free so you can easily bring them to potlucks. You're sure to get some compliments and they're simple to make.

I Love Peanut Butter Cookies!

I love all kinds of cookies but peanut butter ones are my favorite, as long as they are soft and chewy. These cookies are a perfect mix of chocolate and peanut butter and they're not too crunchy. As a kid, peanut butter cookies were always my favorite. I loved trying different variations like Nutter Butters and cookies like that but plain old peanut butter were always my favorite. I really think the chocolate in these give them that a little different unique taste but I love it.

Pampered Chef Stoneware

I love Pampered Chef Stoneware. I haven't bought any in a long time but that's because I haven't needed to. I used to have 3 pizza stones and the only one that has survived is my Pampered Chef one. It's the only one I have now. It's been well seasoned and makes perfect pizzas. As I said before, I highly recommend Pampered Chef. They are so strong and durable and not the junk you would find at cheap outlet stores.
