Happy Pita filling!
Falafel, salad and tahini
This is a great pitta sandwich idea, very traditional and healthy
Fresh falafel balls (you can buy these frozen or try making your own)
Fresh lettuce, tomatoes and cucumber (you can add other ingredients of your choice)
Falafel is made from crushed chickpeas, made into the shape of a ball and lightly fried. You can fill your pitta bread with a few falafel balls, add fresh tomatoes and lettuce and pour some tahini (sesame sauce) on top. It make for a delicious pita bread sandwich and is a classic vegetarian pitta bread filling. Falafel is very nutritious and fills you up for hours.
We made this pita filling at a recent event we had and it was a great hit!
good quality lamb meatballs, made with the seasoning of your choice (garlic, onion and spices are always good)
fresh ripe tomatoes
bunch of fresh parsley
This can work with any type of red meat, but I personally love the flavour of a good quality lamb meat to make the meatballs. Make sure the lamb balls are freshly made when you want to fill your pitta breads and add some slices of fresh ripe tomatoes and a sprig of parsley on top for extra colour. Tahini (sesame sauce) goes very well with this filling although you could use any other sauce you like.
Hot Pita bread with butter
the ultimate comfort food!
ok, so this one might not sound that healthy but it is quite simply divine! Pop your pitta bread in the toaster or have it hot and fresh from the oven and spread lashings of butter on the inside. Watch how it melts and tuck in! For even more comfort add a few lashings of philadelphia cheese...yum!

Try Pita bread with dips
Some of the dips you can try with pita bread
A marriage made in pita bread heaven: Pitta bread and hummus.
If you don't know hummus then you don't know what you are missing. This divine dip or paste made from crushed chickpeas is not only healthy but also extremely tasty, and is at its very best when served with pita bread.
The reign of the Aubergine: Babaganoosh.
If you are from the other side of the atlantic then you probably call aubergines eggplants, but whatever you want to call them I'm sure you will love this wholesome dip made from grilled aubergines and either mayonnaise or tahini.
Fishy and Pink: Taramosalata.
This dip is made from fish eggs and is surprisingly tasty. It has a smooth flavour which is not too overpowering and which works extremely well with fresh pita bread.
Yoghurt and cucumber: Tzatziki.
This fresh dip is very easy to make. Mix natural yoghurt with some thin sliced of cucumber, garlic and a sprinkling of oregano and it's ready! You can adapt how much of each ingredient you want to include till you think it's absolutely perfect. Try serving with some warm or toasted pitta bread.
If you like tahini, and I personally love it, you will love dipping your pitta bread into it and eating it solo. You should be able to buy tahini at any good international food store, remember you usually have to mix it up with water and lemon juice before it is ready to it - so read the instructions .
