Potato and watercress soup. That's what the menu said.
On a journey to the cotswolds recently, my wife and I stopped off at a pub which we were very fond of and had used on this journey many times. We were looking for a warming snack and the potato and watercress sounded just right. We ordered two portions and a drink and repaired to a table in front of the roaring log fire to await our imagined treat.
Before long a steaming bowl of soup was placed in front of each of us. The taste was superb. Beautifully creamy, with the delicate taste of watercress and a strong hint of cheese. It was perfect, great taste and so warming on such a cold day. (Even the smoke from the fire was going up the chimney which was something that a strong wind could put a stop to.)
Whilst enjoying the soup, we discussed how to make it which may sound strange but we do love making soups. We arrived at a possible recipe and decided to try it out the following weekend. It turned out just as we had hoped and I really do think it is one of the best soups that I have ever made. After a pint of Pig's Ear I was ready to complete our journey, my wife of course did the driving!

The Ingredients For Potato And Watercress Soup

A simple run-down of the ingredients for this wonderful soup:-
- one medium onion
- your favourite vegetable stock
- two medium potatoes (approximately 300gms)
- watercress, I used a 100gm bag of washed watercress
- grated cheese, 100 gm, I used a mature cheddar
- double cream, 100ml
- salt and pepper to taste

I always chop the onion quite small prior to starting to cook it.
To reduce the cooking time, peel and chop the potatoes.
Grate the cheese as small as possible
Cooking The Soup
First melt a little butter in the saucepan and soften the chopped onions by frying them in the butter. Do not overcook but a litle browning will not hurt. I usually use vegetable oil or olive oil but for this delicately flavoured soup I decided to use butter ( well actually it was my wife's suggestion).
Once the onion has softened, add approximately 750ml of your favourite vegetable stock, more can be added to the soup if it seems to be too thick for your liking after blending. Add the chopped potato and the watercress and bring to the boil. Add salt and pepper to your requirements. Once the soup is boiling, turn the heat down and simmer until the potato is cooked. If chopped small, this will not take very long. Only about ten to fifteen minutes.
I always use a hand blender to blend my soups, maybe because it is easiest to clean afterwards but the choice is yours. If you are having to break up largish lumps, as here, lower the blender into the soup and give a short whizz. Repeat as many times as is necessary to break up the majority of the lumps. Then insert the blender and whilst whizzing the soup, use the blender in a stirring action until the soup is the required consistency. If necessary, more stock can be added at this stage.
Now we need to add the cream and cheese. Most texts recommend adding cream after allowing the temperature to cool down. But using double cream will prevent the cream from splitting or curdling. Add the grated cheese and double cream and stir until the cheese has melted. Taste and add more salt or pepper if required.
