Looking for a pumpkin dessert recipe that's a home run???

Pumpkin Crunch is a variation of pumpkin pie and is also called Pumpkin Cobbler or Pumpkin Pie Cake. it's sweeter than traditional pumpkin pie and crunchier, simply a melt in your mouth delicious dessert! A HUGE hit for holiday dinners and parties.

My favorite variation of pumpkin crunch: The recipe below calls for a 9 X 13 pan, so you'd make it similar to a sheet cake, which looks like the image here. That works fine but I've also made this pumpkin crunch dessert in individual pies with a graham cracker crust rather than using a 9 X 13 pan, and they were even better! The graham cracker crust makes a perfect blend, and the individual pies make serving so simple.

Find the individual graham cracker crusts (Keebler) in the baking aisle at your grocery store, or you can simply order them from the link below. They come in packs of 6. I bought 4 packs of them and still had leftover mix, so 5 packs would be about right. This would serve 20 people if they only eat one each. They won't, trust me.

If you bake individual pies, the cooking time is less. The original recipe calls for 50-55 minutes, but for the tiny pies I baked for only 40 minutes. They weren't burnt but were plenty crunchy, so best timing may even be a bit less. Watch them close after 35 minutes. You do NOT want to burn these delicious pumpkin crunch babies.

Ingredients

  • 2 cans pumpkin puree (15 oz)
  • 1 package yellow cake mix
  • 1 can evaporated milk (12 oz)
  • 3 eggs
  • 1 cup sugar
  • 4 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1 cup chopped pecans (or walnuts)
  • 1 cup melted butter
  • whipped cream topping

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease bottom of 9 X 13 pan.
  3. Combine pumpkin, evaporated milk, eggs, sugar, pumpkin pie spice & salt.
  4. Pour mixture into pan.
  5. Sprinkle the dry cake mix evenly over your pumpkin mixture.
  6. Top with chopped pecans.
  7. Drizzle melted butter over pecans.
  8. Bake for 50-55 minutes.
  9. Cool.
  10. Serve with whipped cream topping.

      @KimGiancaterino: Hey I'm not much of a cook either, yet this pumpkin crunch is not hard to make. In fact, once at a dinner party when someone asked who made it, one of my friends was aghast that it was ME. HA! She said "No Way" as I was about to top them with whipped cream, and nearly got a cream face mask. LOL
