Shortbread Cookie Recipe

Quick and Easy Shortbread Cookies

This holiday shortbread cookie recipe is unique from other recipes in that the dough does not need to be refrigerated during the preparation process. Which means that this recipe is much quicker, and easier to prepare, than other shortbread recipes.

You simply prepare your dough, then shape it into cookies, and in the oven they go. No fuss, no muss, and in just a matter of a few minutes you have the most wonderful shortbread cookies. These cookies are so delightfully delicious and buttery soft that they simply melt in your mouth.

Keep in mind that shortbread cookies require real butter to make them a true shortbread cookie. Margarine or lard just will not give your shortbread cookies that great taste which they are so famous for. Stay genuine and true to your shortbread recipe and use only real butter when baking shortbread cookies.

Butter is the secret to success in shortbread cookies.
Butter is the secret to success in shortbread cookies.

List of ingredients for Shortbread cookies:

1 cup butter (softened)

1 teaspoon vanilla

1/2 cup icing sugar (also known as powdered or confectioners' sugar)

2 cups flour

1/4 teaspoon salt

Note:

*Soften butter in the microwave on high for about 15 to 30 seconds. The soft butter will then easily create a dough that can be used in your cookie press.

*If you do not own a cookie press keep butter at room temperature, and roll out dough, then cut into shapes. For firmer dough you can also hand form by rolling them into a ball and then pressing them flat with the heel of your hand.

For step by step recipe instructions see below.

My daughter bought me the Wilton Cookie Press for Christmas a couple years ago and I am absolutely delighted with it. It comes with a number of different design patterns, is easy to use, and a breeze to wash up after the baking is done.

Shortbread is actually my favorite cookie. I have many different types I make every year at Christmastime. Sometimes I'll use a small glass as a cookie cutter.

@Diana Wenzel: I grew up on the farm and we always made basic cookies without gadgets so when she gave me the cookie press I did not think that I would be using it too often. Boy was I pleasantly surprised the first time I used it. Now I love it.

I think these shortbread cookies will be great for next week. Thanks! :D

@ClassyGals: In the old days women fancied up their meals in simple ways. Butter and cookie molds were used to decorate these food for the family meals. The old fashioned way of making shortbread cookies in a mold pan actually saved work too.

@Judith Nazarewicz: I actually stumbled onto making these shortbread cookies quite by accident. I decided to try to put the dough into my cookie press and the cookies came out perfect.

I guess you'd call my favorite a "garbage cookie" - I don't know that it has a real name. It's essentially a toll house cookie base, into which you put a random combination of nuts and candy chips. My personal favorite blend is chocolate and butterscotch morsels, and pecans and cashews. The cookie base really just holds all the nuts and morsels together, LOL. I've printed out the shortbread cookie recipe and will bake some once it cools off here - it reads like what I would have called a "Sandie" ... except it has no ground nuts in it. Sure sounds good - I love shortbread, and have quite a few molds in storage. (Can't carry them in the RV, you know.)

I'll have to try using 10x, it sounds like it would make smoother dough. Thanks for sharing. See you around the galaxy...
