Recipe: Easy Oven Fried Chicken

In my never-ending quest for a healthier fried chicken, this ain't it.

However, it is quick & easy & yummy. It has been a big hit with the family (and believe me -- they are picky)

By dinner time, I am pretty exhausted. I like that I can just fix this one and pop it in the oven. Good side dishes are green beans and mashed potatoes.

For this recipe, you will need

1 Tablespoon Butter

A 9"x13" rectangular baking dish

2/3 cup Bisquick baking mix

1-1/2 tsp paprika

1-1/4 tsp salt

1/4 tsp pepper.

The steps

Heat oven to 425. Take 1 Tbsp butter & put it in a 9"x13" rectangular baking dish. Melt the butter in the dish in the oven.

In a separate dish or bowl, mix the Bisquick baking mix, paprika, salt & pepper.

Use this mixture to coat chicken pieces. Recipe is for 1 cut-up chicken, but you can coat chicken thighs, drumsticks or breasts.

Place the coated chicken pieces skin side down in the butter which should be hot now. Bake the chicken 35 minutes, then turn chicken. Bake another 10 to 15 minutes until done.

How to tell when chicken is done

How do you tell when the chicken is done?

Cut into the center of the thickest piece of chicken. If the juice is no longer pink, then you can be pretty sure it's done, but to be on the safe side, a good meat thermometer is a good investment. Chicken should get to 165 degrees.
