Red, White and Blue Semifreddo

A Recipe Born of Desperation

No point in tap dancing around it. I love ice cream. Almost any flavor can be my favorite while I am eating it. I used to dream up combinations I couldn't find in the the local soda shop or the grocery freezer but I couldn't figure out a way to easily make them happen. I normally like to try to make homemade versions of foods I enjoy, but ice cream was a little daunting.

Not In The Budget

Although I keep hinting nobody buys me the ice cream attachment for my KitchenAid Mixer. These days with three boys in college or just lately out I don't have a lot of extra cash for mama's desires. So I compromised a few years ago and started making an Italian type of ice cream that does not require an expensive machine to turn out creamy and delicious. 

It uses a pot on the stove, a dish in the refrigerator and my stand mixer, which hardly counts since I have had it for 20 years. Oh, and a loaf pan or some pint sized containers, And my freezer. 

I watch a lot of food shows and read a lot of food magazines. I honestly cannot remember where I first heard or read of semifreddo , but at some point I gave it a try. Boiled down to its essentials, you make a custard, flavored perhaps, cool it, whip some heavy cream and combine the lot. Then you store it to freeze. Finally, mmmmmmmm,

You need to try it, too. Seriously. For the ice cream lover learning how to make this is life changing.

It has a couple of tricky moments when you make the custard that flavors the icy treat, but I have some tips that make that step pretty easy. You can choose your flavors, mix other ingredients in before freezing, mold it into shapes to serve or scoop it like regular ice cream.

What is not to like? Well, maybe the high fat content, but this is ice cream after all. Everything in moderation. 

Fruity Obsession

This year for the Fourth of July I decided to to try a red white and blue theme with semifreddo. Fruit based flavors were the obvious choice for this summer dessert and I thought I would try raspberry and blueberry. The white member of the trio was also pretty easy as I had just made a key lime semifreddo for Father's Day and decided it deserved another star turn.

Mold It In A Loaf Pan Or Scoop It

Or both! I made a three layer version of this and it is freezing away happily waiting for a family party on the coming weekend. But there was extra mix for each flavor so we had an early holiday dessert of scooped red white and blue. as you can see in my picture above. 

Key Tips

Be sure to give yourself enough time to make this. A day or two ahead is ideal and it does keep for up to a month so you can preplan easily. Once the custard is made chill it thoroughly before combining it with the whipped cream.

Cook Time

Prep Time: 45 minutes -- 15 per flavor

Total Time: 2 days including freezing

Serves: 12

Ingredients

  • Blueberry Semifreddo:
  • 4 egg yolks
  • 1/2 cup sugar
  • 1/4 water
  • 2 cups blueberries
  • 1 cup heavy cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • Key Lime Semifreddo:
  • 4 egg yolks
  • 1 14 ounce can sweetened condensed milk
  • 1/2 cup key lime juice
  • zest from one regular lime
  • 1 cup heavy cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • Raspberry Semifreddo:
  • 4 egg yolks
  • 1/2 cup sugar
  • 1/4 water
  • 2 cupsraspberries
  • 1 cup heavy cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla

Instructions

  1. Blueberry Semifreddo:
  2. In a saucepan whisk together the egg yolks, blueberries, water and 1/2 cup of sugar. Cook over medium heat until the mixture almost comes to a boil. If you have a instant read thermometer cook until the mixture comes to 197 degrees. If you don't have a thermometer, just use the old fashioned method of dipping in a spoon, flipping it over and seeing if your finger leaves a trail in the custard that coats the spoon.
  3. Make sure not to boil -- watch and whisk constantly.
  4. When the proper consistency is reached refrigerate the custard in a shallow dish for at least 6 hours. It must be completely cold.
  5. Whip 1 cup heavy cream with the 1/4 cup sugar and vanilla until stiff peaks form.
  6. Fold the thoroughly chilled blueberry custard into the whipped cream. Leave some white streaks if desired, or completely combine.
  7. Freeze in your preferred container.
  8. A loaf pan is classic -- line with plastic wrap first. When frozen, unmold by dipping the bottom of the pan in hot water, unwrapping the top of the semifreddo, placing a plate on top, flipping the pan over and removing pan and wrap. Slice to serve.
  9. I have had success just using pint containers if you prefer to scoop like regular ice cream.
  10. Key Lime Semifreddo:
  11. Combine all the ingredients except the lime zest, the heavy cream, the 1/4 cup sugar and the vanilla. Cook the custard as for the blueberry semifreddo. Then complete the mix and freeze following steps 2 through 9 above, adding the lime zest at the end of step 6,.
  12. Raspberry Semifreddo
  13. Make exactly the same way as the blueberry semifreddo, following steps 2 through 9 except using raspberries. If you are not fond of raspberry seeds, push the custard through a sieve before freezing.
  14. Holiday freezing option -- make blueberry mix first. Line a loaf pan with plastic wrap and spoon enough blueberry semifreddo mix to come up about a third of the pan. Freeze for 6 hours or more. Then add a layer of key lime mix over the blueberry. Freeze for another 6 hours or more. Then add a layer of raspberry mix to come up to the top of the loaf pan. Freeze thoroughly. Follow unmolding instructions above at # 8.
  15. If you make a layered loaf, you will have extra of each flavor. Freeze in pint containers for scooping.

      @Elsie Hagley: You go, girl! It is really easier than it seems once you get the hang of the custard making which is just a matter of whisking. Just be warned it is super rich, but I don't think that is really a bad thing!

      You can adjust the flavorings -- chocolate, banana. I am currently dreaming of coconut with some hot fudge on it.
