Rhubarb - the Great Dessert Vegetable
When I say "rhubarb," you probably think of jam, or perhaps rhubarb crisp. It surprises many people to learn that rhubarb is actually a vegetable!
Yes, its true. The stalks are the only part of the plant that can be safely eaten (the leaves and roots are poisonous). Like a sweet version of celery, the fibrous stems are easily incorporated into many recipes as a slightly sweet and tart ingredient.
Rhubarb is a perfect crop for areas like the Central Oregon region in which I live. Its perennial, which means that it comes back each year in your garden, and also very hardy. The plant grows well in cooler regions and can stand up to drought, pests and more.
Some of my favorite childhood memories include harvesting rhubarb from our garden - or from my grandmother's 2-acre plot. We'd make pies, jams, muffins and more. No wonder I love rhubarb so much!
When rhubarb combines with strawberries, the resulting dessert is one that has just the perfect combination of sweetness and tart. Warm from the oven, topped with cream, this will be your go-to dessert recipe during spring and summer!

How to Make Rhubarb Strawberry Cake
This super easy recipe for rhubarb strawberry cake uses prepared mix to ease preparation time and shopping ingredients. Its so easy that my kids love to help me in the kitchen. It's a great summertime dessert to finish out a special day.
- 5 c. chopped rhubarb
- 1 4 oz. package strawberry gelatin
- 1 pint fresh strawberries, sliced
- 1 c. granulated sugar
- 1 package yellow cake mix
1. Mix the cake batter according to directions on the box
2. Pre-heat the oven to 350 degrees
3. Grease a 10-inch round cake pan
4. First, put the chopped rhubarb and strawberries into the pan
5. Add the sugar and gelatin to the mixture and stir together
6. Finally, pour the cake mixture over the top
7. Bake at 350 for 45 minutes
8. Remove from oven, allow to cool for 10 minutes, then turn over onto a serving platter. Slice and serve with additional chopped strawberries and whipped cream, or vanilla ice cream.
Enjoy slightly warm - or see if you can make it last several days at room temperature. If your home is like ours, most if not all of the Rhubarb Strawberry Cake will be gone the first day!
