The Very Best Rice And Peas Recipe

This delicious recipe for rice and peas was designed to go with one of my favorite Jamaican meals, my Fiery Hot Jamaican Jerk Chicken Recipe, but it goes well with a variety of Caribbean dishes including Caribbean Curry Goat.

Traditionally gungo peas, also known as pigeon peas, are used in this Jamaican peas and rice recipe. You can find them in Caribbean food stores and some of the larger supermarkets with "ethnic / world food" isles, but if you can't get them red kidney beans will be fine.

If you want to make a vegetarian version of this Rice and Peas

substitute the chicken stock for an equal amount of vegetable stock.

Ingredients for The Very Best Rice and Peas Recipe

Whilst you can use regular 'dried' gungo peas or kidney beans (soaked overnight), I heartily recommend that you use canned peas or beans, they are so convenient to use and take on the flavours of the other ingredients well.

This should make enough rice and peas to serve 4 people

1 400g can gungo peas

1 tbs vegetable oil

1½ mugs long grain or basmati white rice

1 400g can of coconut milk (reduced fat variety is fine)

1 pint of chicken stock

1 onion

1 hot chilli (bird eye, scotch bonnet)

2 peeled cloves of garlic

Salt to taste

How to make The Very Best Rice and Peas

Finely chop the onion, chilli and garlic and mix together or use a mini chopper

Heat the oil in a heavy based saucepan and fry the mixture for 4 minutes, letting it soften. Stir in the rice making sure it is well coated in oil, then add the coconut milk, stock and the drained, rinsed gungo peas.

Bring to the boil, then put a lid on the saucepan and turn the heat down low. Cook for 15 minutes or until the rice is cooked through and all the liquid has been absorbed. . Season with salt if desired.
