Best Chocolate Crispy Cake Recipe in the Whole Wide World!

Easy rice crispy, mars bar cake recipe. Great for putting out after dinners and little treats for your Party, can be made days in advance too! This is the BEST mars bar cake, filled with little bits of marshmallow, for a great tasting gooey crispy cake.

We also make these as little extras for Gifts, this year we made little bags as presents. Problem is every celebration means we need to make them!

My husband has a very sweet tooth, he loves the Mars Bar Chocolate crispy cake, (like the rocky robin) but could never find one that tasted like it used to. So he read the ingredients on the packet and decided to make his own.

The ones for sale had cherries, and crushed biscuits that seemed to go stale as you were eating it. He decided to make his own recipe for Gooey, Chocolate Crispy, Marshmallow, Mars Bar Cake, and it has so many caloires shhh....

What you will need

And a little bit of strength

Now my husband is 6ft 10" and an ex ice hockey player so you can imagine his build. Seeing him in the kitchen at the cooker is a rareity in itself. But he was determined to make his favourite crispie cake. I was desperate not to make a fuss and encourage this new found inspiration to explore this foreign part of the house for him. Our daughter helped out too, eating the Marshmallows!


  • bowl
  • microwave/or pot of hot water (to melt the chocolate)
  • large wooden sppon
  • Heavy based medium sized pot - he likes to use our soup pot as it is good to grip onto when mixing.

Ingredients to make a medium sized baking tray of finished cake

1 Pkt Cooking chocolate - dark or milk

1/6th of a medium sized pkt Butter or margerine

Rice crispies - cereal

Mini marshmallows - you can cut up larger marshmallows if you can't find mini ones

Golden Syrup

4 or 5 Mars Bars

How to make your Crispie Cake

Melt the butter and Syrup together in the pot and mix well until all melted. Add in the chopped up Mars Bar chunks, and stir until melted, this should not be done over a hot heat, you just want to melt it all.

Once all melted.

Slowly add in the rice crispies, until the mixture is all used up - the mixture gets very tough to stir at this point and you need a lot of strength.

As you are doing this add in the mini marshmallows, bit by bit stirring until all mixed up. Yes its gooey.... real Gooey.

You are going to transfer the mixture onto your greased baking tray, and pat down.

My husband can be seen beating the poor mixture into place with the fish slice! (he also dips it in hot water to make it easier to work with the mixture.

Pu this in the refrigerator for 1/2 hour until it cools and sets.

Melt the chocolate in the bowl over the pan of hot water.

Once it is ready pour it over the mixture spreading evenly.

Place back in the fridge to set.

Once set it is ready to be sliced up and eaten.

Easy tray bake cakes to make for the School Fete

and the most popular

This is an absolute must if you have to make a tray bake for the school fete, we made two tins last year, and instead of going out with the coffees they were sold, we were amazed at how quickly they disappeared.

And have our orders in for next year, this is so easy to make, and believe me it does not last long in a house that loves chocolaty snacks.

Word spreads fast, and you know it is a winner when you are asked in the local shop, if you would make it for the Brownies Jumble sale, My husband loves it, and finds it funny how the ladies all enjoy his cake.

      I used to have the neimann marcus recipe for the chocolate chip oatmeal cookies years ago, I wish I could dig that up, they were sensational! The recipe above sounds like a winner, can't wait to try it out. So if anyone out there has an awesome chocolate chip cookie from scratch recipe, please pass it on.

      I don't eat many sweets these days, but this does sound yummy. It reminds me of the recipe we made back in the 60's, home made O'Henry Bars. Gosh I could eat a lot of those when I was young. Now, not so much.
