Sausage Casserole Recipes

There really are sausage casserole recipes for any meal of the day. There are sausage casserole recipes that you can make with Italian sausage, breakfast sausage, polish sausage and more.

Here I'd like to share some of my favorite sausage casserole recipes. They come in a variety of flavors and there is a recipe for every taste.

Italian Sausage & Cheese Potato Casserole Recipe from Bob Evans

Prep time :15 minutes

Cook time :15 minutes>

Makes 6 - 8 servings


* 1 lb. Bob Evans Italian Sausage Roll

* 1 (20 oz.) package Bob Evans Home Fries Diced Potatoes

* 6 eggs

* 3/4 cup milk

* 1 cup shredded Monterey Jack cheese

* 1/4 tsp. salt

* 1/4 cup chopped green onions

* 1/8 tsp. black pepper

* 1 can (4 oz.) chopped green chiles, drained

* 1/2 cup grated Parmesan cheese


Preheat oven to 350F. Crumble and cook sausage in medium skillet until browned. Drain off any drippings. Spread potatoes in greased 13" x 9" baking pan. Top with cooked sausage, Monterey Jack cheese, green onions and chiles. Whisk eggs, milk, salt and pepper in medium bowl until frothy. Pour egg mixture over sausage layer; bake 30 minutes. Remove from oven. Sprinkle with Parmesan cheese; bake 15 minutes more or until eggs are set. Refrigerate leftovers.

Sausage and Egg Breakfast Casserole Recipe

This easy breakfast sausage and egg casserole recipe is great for weekends or holiday mornings. It is quick and easy to make and everyone will love it.


* 12 pieces of white bread with crusts (whole wheat for healthy option)

* 12 slices of American cheese

* 12 eggs

* 3 cups milk

* 1 teaspoon dry mustard

* 1 teaspoon sage

* 3 pounds breakfast sausage (I prefer pork, but for healthy option you can use turkey sausage)

* Shredded cheddar cheese


* Cook, cruble, and drain grease from sausage

* Mix eggs, spices, and milk with wire wisk in large bowl

* Trim crusts from bread.

* Spray 9x13 inch baking dish with non-stick spray

* Now begin layering:6 slices of bread,6 slices of cheese, half of sausage, and then half of egg mixture

* Repeat layering.

* Sprinkle top with shredded cheddar cheese.

* I like to prepare this the night before and cover with foil and then refrigerate. Otherwise, it can go right in the oven.

* Cover with tin foil and bake at 325 degrees for 50 minutes. Uncover and bake for an additional 15 minutes

Potato Sausage Casserole Recipe

This hearty meal is a simple and delicious classic. The sausage and potatoes casserole is a meal that the entire family will love.


* 1 pound bulk pork sausage

* 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted

* 3/4 cup milk

* 1/2 cup chopped onion

* 1/2 teaspoon salt

* 1/4 teaspoon pepper

* 3 cups sliced peeled potatoes

* 2 cups (8 ounces) shredded cheddar cheese

* Minced fresh parsley, (to taste)


* In a large skillet, cook sausage over medium heat until no longer pink; drain and set aside. Combine the soup, milk, onion, salt and pepper.

* In a greased 2-qt. baking dish, layer half of the potatoes, soup mixture and sausage. Repeat layers.

* Cover and bake at 350° for 1 hour or until potatoes are tender. Sprinkle with cheese; bake, uncovered, for 2-3 minutes or until the cheese is melted. Garnish with parsley if desired. Recipe Makes: 6 servings.
