Apakah anda mencari resep2 masakan Sunda? Di bawah ini adalah resep2 masakan Sunda pribadi saya, jadi sudah pasti dijamin enak.

Jika kita berkunjung ke Rumah Makan di Bandung ataupun kota-kota di Jawa Barat, mungkin kita tidak asing lagi dengan menu Sayur Asem, Gepuk, Tahu Goreng, sambal terasi dan lalapan-nya. Cita rasa sayur asem yang asem segar dan sedikit manis; dipadu dengan melinjo, buncis dan jagung, dan kemudian dimakan dengan nasi pulen panas, gepuk yg empuk, tahu goreng yg lezat, sambal terasi dan lalapan sayur yang segar; adalah ciri khas masakan Sunda.

Sebagai orang Sunda yang tinggal di luar Indonesia, keluarga saya seringkali kangen untuk makan masakan tersebut. Akhirnya terciptalah resep sayur asem dan gepuk di bawah ini. Dan ketika kita makan makanan2 tersebut, kita seakaan-akan dibawa terbang ke Bandung dan makan di saung-saung, diiringin oleh gemercik air dan ikan yang berenang2 di kolam di bawah saung.

English Version:

If you've been to Indonesia and visited traditional Sundanese restaurants in West Java, you may have seen or ate these dishes: Sayur Asem (Sour Tamarind Vegetables Soup), Gepuk (Sweet Fried Beef), Tahu Goreng (Fried Tofu), Sambal Terasi (Balacan Shrimp Paste chili) and lalapan (fresh vegetables); all are famous Sundanese food.

The unique taste of Sundanese food come from the sourness of sour tamarind soup. The sourness is balanced nicely with sweetness of Gepuk (Sweet Fried Beef), hot balacan chilli, delicious and crispy fried tofu and fresh vegetable.

As Sundanese people who live overseas, my family often crave for these food. So I created these recipes below. When we eat Sundanese food, we feel like we're in West Java and eat in the beautiful "saung" entertained by the water splashing from the fish pond underneath the "saung".

Note: These Sour Tamarind Vegetables Soup, Sweet Fried Beef and Fried Tofu Recipe are my own personal recipes. This whole article is purely my own writing. I have found people copied-pasted portion of my article & recipe on their website without my permission. Gepuk dan Tahu Goreng

Resep Gepuk atau sering disebut juga Empal

BAHAN:

- 500 gr daging sapi gandik, rebus dengan 1 daun salam sampai empuk

- 200ml santan kental

- Serei dikeprek

BUMBU DIHALUSKAN:

- 6 siung bawang merah

- 3 bawang putih

- 1sdt ketumbar

- 1cm laos, ato 1sdt laos bubuk

- sejumput gula merah (sesuai selera)

- garam secukupnya

CARA MEMBUAT:

1. Rebus daging sapi sampai empuk

2. Setelah empuk, potong2 daging tipis2 menurut serat. Lalu pukul2 dgn pemukul daging sampai tipis.

3. Rebus santan dgn bumbu halus, serei dan daging sapi sampai airnya habis.

4. Tiriskan daging sapi, kalo udah agak dingin, goreng sampai berwarna kecoklatan.

5. Siap dihidangkan.

English Version - Sweet Beef Recipe:

Ingredients:

- 500gr beef silver side

- 2 bay leaves

- 200ml coconut cream (I prefer to use the 98% fat free coconut cream)

- 2 lemongrass, crushed

- 2tsp indonesian palm sugar

- salt

- 1lt water

- 1/2 tsp vegetable oil for frying the spices and 5tsp vegetable oil for frying the beef

Spices Ingredients (grind them together using food processor):

- 6 shallots

- 3 garlic

- 1tsp coriander powder

- 1tsp galingale powder

Directions:

1. Boil beef with 2 bay leaves & water until meat is tender.

2. When the meat is tender, cut them thinly according to its fiber. Set aside the liquid from boiling the beef as it makes a really nice beef broth that we can use for our Sour Tamarind Vegetables Soup.

3. Fried the blended spices with vegetable oil for around 1 minute, and then add coconut milk. When the coconut milk & the spices blend together, add the beef. Boil until the liquid is almost gone.

4. Remove meat and set aside for few hours (until you're ready to fry them).

5. Fry the beef until cooked.

6. Ready to be served with Sayur Asem and Sambal Terasi.

Resep Tahu Goreng

Membuat tahu goreng mudah sekali. Tipsnya di bumbu halusnya, harus pas rasanya. Tambahkan ketumbar yang banyak jika anda suka.

BAHAN:

- Tahu putih, potong kotak2 atau sesuai selera..

- Air secukupnya

BUMBU HALUS:

- Bawang putih

- Kemiri

- Ketumbar

- Garam

CARA MEMBUAT:

1. Haluskan bumbu2 halus, kemudian masukkan air secukupnya.

2. Rendam / marinate tahu dgn air yg telah dicampur bumbu halus selama 30 menit.. lebih lama lebih baik supaya bumbu lebih meresep.

3. Goreng tahu dgn minyak panas.

English Version - Fried Tofu Recipe:

It is extremely easy to make a fried tofu. The key for a delicious fried tofu is the spices. I usually add plenty of coriander powder because it gives a strong pleasant smell and taste on the tofu.

Ingredients:

- Medium soft tofu / hard tofu, cut 2x2 cm square

- Water

Spices:

- 2 garlic, crushed

- 2 candle nuts, crushed

- 2tsp coriander powder

- 1tsp salt

Directions:

1. Blend the spices together using food processor or pestle & mortar. Then add water.

2. Marinate the tofu with the water & spices above for 30 minutes or more. The longer the better.

3. Use a paper towel, drain the water from the tofu to remove excess liquid and then fried the tofu with plenty of oil until crispy .

4. Ready to serve.

Sayur Asem

Resep Sayur Asem

BAHAN:

- Air kaldu sapi (air bekas ngerebus daging gepuk - atau air kaldu sapi biasa)

- Jagung yg dibelah menjadi 2 atau 3

- Labu siam, potong kotak2

- Buncis atau kacang panjang

- Kacang tanah segenggam

- Melinjo (saya tidak pakai karena tidak menemukan melinjo)

- 2 lembar daun salam

- 1sdt lengkuas bubuk

- air asam jawa secukupnya.

BUMBU HALUS:

- 5 siung bawang merah

- 2 buah bawang putih

- 3 cabe keriting (bisa ditambahkan jika anda menyukai sayur asem yang pedas)

- 2sdt terasi

- 6sdt gula pasir (bisa dikurangi kl ga terlalu suka manis)

CARA MEMBUAT:

1. Rebus sayuran yg keras dulu (contohnya kacang tanah & jagung).

2. Setelah empuk, masukkan bumbu halus, daun salam, lengkuas bubuk dan air asam jawa.

3. Masukkkan labu siam & buncis.

4. Masak sampai semua sayuran empuk, hidangkan panas2 dgn gepuk, tahu goreng & sambel terasi.

English Version - Sour Tamarind Vegetables Soup Recipe:

Ingredients:

- Beef broth (I usually use the broth from the broth of Gepuk) or you can use normal beef broth, it's up to you.

- Corn

- Chokes, cut 2x2cm

- A handful of green beans or snake beans

- A handful of raw peanuts

- Melinjo (I'm sorry, I don't know what's melinjo in English and I never found any melinjo in Australia)

- 2 bay leaves

- 1tsp galangale powder

- 1-2tsp tamarind paste (according to your taste)

- 6tsp sugar (according to your liking)

- salt

Spices (grind them together in food processor / pestle & mortar):

- 5 shallots

- 2 garlic

- 3 big / long chili (optional)

- 2tsp shrimp paste (tips: grill shrimp paste for around 1 minute to make it more fragrance)

Directions:

1. Boil hard vegetables / ingredients first (ie. corn & peanuts) with the beef broth

2. When they're tender, add spices, bay leaves, galangale powder, tamarind paste, salt & sugar.

3. Add chokes and beans.

4. Boil until all vegetables are tender, adjust the taste and serve.

Prep Time: 10 menit

Total Time: 1 jam 10 menit

Serves: 2 orang

Ingredients

  • 3 - 5 lembar daun salam (cuci bersih)
  • 1 cm laos (kupas - cuci - keprek)
  • 4 siung bawang putih (haluskan)
  • 3 sdm gula jawa (sesuai selera)
  • 1 papan tempe (potong2 sesuai selera)
  • Air / lebih sedap pakai air kelapa untuk merebus
  • Garam & gula secukupnya
  • 1 cm asam (larutkan dengan air)

Instructions

  1. Rebus air di panci (ukuran pancinya yang kira2 bisa masuk untuk 1 tempe), ketika air mendidih, kecilkan api (api sedang) masukkan daun salam, potongan laos, bawang putih, gula jawa, air asam jawa & tempe. Tambahkan garam & gula putih. Rebus selama kurang lebih 1 jam. Aduk-aduk setiap 15 menit.
  2. Ketika air sudah habis, angkat, sisihkan.
  3. Jika mau lebih sehat, bisa dimakan begitu saja. Tetapi, jika mau digoreng juga boleh.

Ingredients

  • 3 - 5 bay leaves
  • 1 cm galangal (crushed)
  • 4 garlic (crushed)
  • 3 tbp palm sugar
  • 1 block of tempeh
  • 3 cups of coconut water or water
  • salt & sugar (to taste)
  • 1 cm tamarind (disolve in 3 tbp of water)

Instructions

  1. Boil coconut water / water.
  2. When the coconut water / water is boiling, add the tempeh and reduce the heat to medium heat.
  3. Add bay leaves, galangal, garlic, palm sugar, tamarind liquid. Add salt & sugar to taste.
  4. Boil for about 1 hour or until the liquid is gone. Stir every 15 minutes.
  5. Tempe bacem can be eaten as it is or you can fried them and serve them with belacan chilli.

Resep Tempe Penyet

Tempe penyet adalah makanan kegemaran suami saya, biasanya saya memadukannya dengan kangkung ca dan dimakan dengan nasi pulen hangat ketika udara sedang dingin-dingin menusuk.

Tempe yang digoreng dengan setengah matang dengan bumbu ketumbar, lalu diulek dengan sambal terasi bikinan sendiri, dimakan langsung dari coetnya, nikmatnya tidak dapat digambarkan.

Berikut ini resep tempe penyet:

Cook Time

Prep Time: 10 menit

Total Time: 1 jam 10 menit

Serves: 2 orang

Ingredients

  • 1 papan tempe (potong tipis-tipis)
  • 1 sdt ketumbar (haluskan) atau 1sdt ketumbar bubuk
  • 1 sdt garam (sesuai selera)
  • 3 siung bawang merah
  • 5 cabai keriting (sesuai selera)
  • terasi bakar secukupnya
  • 2 butir kemiri
  • sejumput gula merah
  • Air

Instructions

  1. Rendam tempe dengan air, ketumbar bubuk & garam selama kurang lebih 1 jam supaya bumbu meresap.
  2. Bikin sambal terasi dulu. Caranya: Ulek bawang merah, cabai keriting, terasi, kemiri, beserta gula merah & sedikit garam. Sisihkan.
  3. Goreng tempe dengan minyak panas hingga setengah matang (note: lap dulu tempe basah dengan tissue dapur sebelum digoreng supaya pas digoreng minyaknya tidak lompat-lompat).
  4. Ulek tempe bersama dengan sambal terasi, kasih minyak bekas menggoreng tempe sedikit, supaya rasanya lebih nikmat.
  5. Sajikan.

Tempe penyet is my husband's favorite Sundanese food. It is best eaten with Kangkung Belacan Stir Fry and hot fluffy steamed rice. We usually eat it straight from the stone-mortar. So basically, tempe penyet is fried tempeh which are being crushed with "sambal terasi / belacan chilli" using pestle & mortar. Very easy and quick to make, the taste is very delicious too.

Here is tempe penyet recipe:

  • Cook time: 1 hour 10 min
  • Ready in: 1 hour 10 min
  • Yields: 2 people

Ingredients

  • 1 block of tempeh (slice thinly)
  • 1 tsp corriander powder
  • 1 tsp salt
  • 3 shallots
  • 5 long chilli
  • 1 tsp belacan (roasted)
  • 2 candlenuts
  • palm sugar (according to taste)
  • 1 cup of water

Instructions

  1. Marinate tempeh with water, coriander powder & salt for 1 hour.
  2. While we are waiting for the tempeh, we can make belacan chilli. It is very easy, using pestle & mortar, crush together the chilli, belacan, candlenuts, shallots, palm sugar & a bit of salt to taste. Leave the belacan chilli on the mortar.
  3. Now, you can fried tempeh. Drain the water from tempeh first with kitchen paper before you put it into hot oil.
  4. Crush fried tempeh with the belacan chilli. Add a little bit of oil from frying tempeh.
  5. Serve while it's hot.

    @poorwendy lm: Yes it is, you should try it, very fresh tastes, serve warm or cool (room temperature) will give us different sensation. That was my experience, with my mum sour tamarind soup.
