A slow cooker is not a steamer as you could easily be fooled, though both use the power of hot steam to cook food. If in the steamer you can put several layers of food on several sieves, over a quantity of liquid, in the slow cooker the food cooks even in the liquid from the pot.

The secret of this slow cooker which you do not even have to lift the lid during cooking is the constant temperature used to cook the ingredients, lower than reaching boiling, baking or roasting.

A pot three decades old, brought back with a modern twist.

The Slow Cooker is not new. It appeared in the 70s and then gradually improved the appearance and functions. Principles by which it works is, however, the same. The food is cooked slowly, as if you hold it over low heat, but you will not need to mix in it so it does not catch the pot.

A modern Slow Cooker can be programmed to cook your food over night or while you're at work, at low temperatures or higher, but never above 100C. Thus, stews, soups and even cakes can be done with minimal effort on your part.

The base of the slow cooker is the pot (ceramic) which is covered with a glass lid. Hot air vapor is formed when the liquid in the pot starts to heat up, condenses on the lid and turns into water that returns to the pot and so food will not burn and will not stick to the pot so that it constantly cools the droplets formed by condensation. The liquid is heated by heat from the walls and distributedin the food flavors.

Most devices allow you to set the slow cooker cooking functions at low temperature, high or average, and some models by keeping food warm. This function is not advisable to use more than one hour after the meal is ready. Best models and programming functions start the cooking process.

Advantages of cooking with a slow cooker

-food is tastier in slow cooker because the vapor and juice and ingredients that are simmering are kept well inside, so flavors are absorbed more deeply

-prepares food easily without you having to sit in the kitchen to check the pot. You can even go out while the slow cooker while prepare the meal for you

-food is healthier. Recipes for slow cooker do not need oil or fat, only water or broth to cook food. If you use meats, make sure you clean them of the excess fat, and you get the same good taste for food, but exceptionally healthier

-You get rid of the kitchen sauna in the summer months when you have to boil for hours a soup or a stew

There are some minor drawbacks because sometimes there is too much risk to cook chicken, which is softer. In addition, you must learn to readjust your recipes for cooking time and quantities required for a slow cooker.

Good tips to follow when cooking in slow cooker

A slow cooker is ideal for dishes to be cooked at low heat for a long time. You will not succeed the first time perfectly, but over time you will learn the secrets.

-Do not fill more than 2/3 of the pot with liquid. If there is too much liquid the food will not cook properly, and if it is too little will cook too quickly.

-Ingredients based at the base of the pot will cook faster and will be cooked because they are completely covered by the liquid.

-Remove the skin from chicken or the fat from pork fat , otherwise it will melt and will extend the cooking time. Meats need generally almost 8 hours to be prepared in a slow cooker.

-If you make a dish of vegetables and meat, do not put the vegetables in the pot along with the meat, vegetables will cook faster than meat.

-Do not lift the lid too often , especially if you cook at low temperature. Every time you raise the lid, the heat comes out of the pot and you have to prolong the cooking time by 20-30 minute. To check the food is enough to move a little the slow cooker, so that condensation drops will fall and you can see inside.

If you are cooking with a slow cooker and have other tricks you know I expect you to share them.
