No Meat Crock-pot Lasagna Recipe

Vegetables used in this crock-pot lasagna recipe are red and yellow peppers, yellow squash and baby portabella mushrooms. The best part about his recipe is that you do not have to precook lasagna noodles. They will cook and soften up on their own in the slow cooker. The recipe requires grilling or pan frying of vegetables to accomplish more rich and home cooked flavor. The last secret for this recipe is fresh oregano. You can use dried oregano as well, but fresh stuff is much much better.

Vegetarian Lasagna Recipe Ingredients

Recipe for 6-8 Servings

1 box of regular lasagna noodles, uncooked

2 (16 ounce) jars of your favorite tomato sauce

1 pint of small portabella mushrooms

2 yellow squash

3-4 red and yellow peppers

1lb fat-free ricotta cheese

1cup mozzarella cheese, shredded

fresh oregano

Vegetarian Lasagna Recipe Instructions

Preparation and Cooking

Make grilled veggies:

Cut and clean peppers, yellow squash, and mushrooms and spray with extra virgin olive oil. Preheat the grill to medium high heat and grill for 10 minutes turning them over once.

Assemble and bake lasagna:

Cover the bottom of your crock pot (6-Quart) with a thin layer of pasta sauce and start layering:


layer of noodles (break to fit)

layer of pasta sauce

layer of ricotta cheese

layer of grilled mushrooms

season with oregano (see Cook's note bellow)

To finish, cover top with layer of noodles, little more sauce and sprinkle mozzarella on top.

Cover and cook on low for 5 to 6 hours.

Cook's Note: Fresh oregano has very strong flavor. Just add a little bit to each layer. You can always add more after lasagna is cooked and served on your plate.
