Personal Apple Pie

Organic almost ? ? ?

This is a very easy thing to make..I was short of cash and needed something to give as a a gift for the Holiday's :O) I Love the Holiday's...

I call it " Deepdish Personal Apple Pie"

Ingredients consist of the following:

6-7 big Granny Smith apples (mine were organicly grown by a friend)

1 TBLS. or so of lemon juice ( to keep the apples from getting brown)

2 TBLS organic unbleached flour

4 TBLS organic butter

1/4 C organic sugar ( or less)

1 - 2 teas. of cinnamon (depending on your taste)

1 box of prepared pie crust (This was NOT organic though) but works very well

Spray oil

Small loaf pans from the store (disposable ones)

I used 4 for this recipe

Pre-heat oven to 400 degrees before ready to bake..And bake for 50 minutes (well in my oven that was how long it took)

DIRECTIONS : Peal and core apples...then slice in medium slices.

Put in a bowl with the lemon juice, cinnamon,and sugar. Stir several times. If you are short of time (which I was ) I put the bowl in the refrigerator, covered and let them marinate ...till i could get back to the project. Then add the flour to help thicken while cooking

Then I warmed the pie crust in the microwave for 15 seconds to make it easier to roll out. Floured the board and rolled the dough out as big as I could. Flouring each time I turned it over to roll some more. Then I took a pizza cutter to square it off, cause it was round and oblong.

Cut that into 4 pieces...Sprayed the pans with the spray oil and filled them with the apple mixture (notice NO bottom crust) Placed the butter on top and also poured the juice into the pans..oh maybe 2 TBLS worth.

Placed the crust on top and rolled over the edges inwardly- and make sure it seals..I cut a slit in the center for ventilation..also cut out some leaves for on can be as creative as you want to be here..brushed the dough with organic milk and sprinkled a sugar cinnamon mixture on top... a very small amount.

Then I placed the 4 loaf pans on a cookie sheet ( with sides on it), to help keep my oven clean (which I had just cleaned for the Holiday) and baked for 50 minutes, cooled them completely and covered them with saran wrap and then tied a pretty bow around them.

It is a perfect serving for two...or for one...warmed up then add some whipped cream or ice cream on top.. Enjoy !

      I've never been a big fan of apple pie, but something happened this year and my like for baked apples has finally come about.
