I love fruits and I love all kinds of flavours of Jello (Jell-o)!

The only fruit in this 'Summer Mango Jello Dessert' recipe is mango but you can put whatever fruit you like and mix and match as you please. Sometimes I even include a mix of two (2) or more types of fruit. The options are limitless!

Jello and fruit dessert recipes, such as this one, always reminds me of summer, good food, sunshine, the outdoors, beach, family, friends and laughter.

This Jello (Jell-o) recipe is a very easy and refreshing recipe that is really good on very hot days. So whether or not it is summer right now where you are, here i s a simple and delicious dessert that you must include in your dessert menu. It's a delightful blend of sweet, nutritious, delicious and easy!

  • Cook time: 4 hours
  • Ready in: 4 hours 30 min
  • Yields: 8

Ingredients

  • 1 6 -ounce packet of Jello or Jell-O [red/cherry Jello, orange Jello or green/lime Jello]
  • 2 cups Cold Water
  • 2 cups Hot Water
  • 3 Mangoes (diced) [or your favourite fruit]
  • 2 tablespoons Condensed Milk

Instructions

  1. Boil 2 cups of water in a kettle or pot.
  2. Take 2 cups of cold water from your refrigerator (or dissolve ice cubes in room temperature water to make 2 cups of cold water)
  3. Pour the orange Jello (Jell-O) powder into a container. (I usually use the same container that I would be using to refrigerate the Jello; a plastic or aluminium container is best.)
  4. Pour the boiling water into the container with Jello (Jell-O) powder and stir for about 1 - 2 minutes or until the Jello (Jell-O) powder is completely dissolved.
  5. Pour in the 2 cups of cold water immediately after and stir thoroughly for about 1 minute.
  6. Refrigerate the resulting mixture for about 4 hours or overnight.
  7. (The directions for making the Jello or Jell-O are usually on the box but I will put it here for ease of reference.)

Once the orange Jello (Jell-O) has set and it is nice and firm (in a giggly sort of way), you're on the home stretch.

1. Scoop out some orange Jello (Jell-O) and place in a dessert glass.

2. Peel off the mango skin and dice the mangoes into inch chunks

3. Spread the diced mango - 3 heaped tablespoons - on top of the orange Jello (Jell-O).

4. Drizzle 2 tablespoons of condensed milk on top of the diced mango.

5. Voila! Your Summer Mango Jello Dessert

      I used to love making plain layered Jello. Drove my mom crazy with two to three day waits for a shimmering tower of Jello that no one would eat because it had no fruit or anything else in it! Now you are getting me thinking about Jello eggs.

      Strawberry Banana jello is my personal favorite, but your recipe sound delicious! I have never considered adding condensed milk to a jello recipe. I will definitely have to try this. By the way, my husband is sitting next to me and reading. He told me to tell you that he prefers lime green, well chilled :) Yes, he is having a bit of fun with us!

      This is one flavor of Jell-O I have not tried but will make a sticky for this summer. I have no preference as to a favorite Jell-O as I enjoy them all; especially during the Holidays.
