Super Easy and Great Tasting Chicken Pot Pie Recipes

Who doesn't love a yummy chicken pot pie?

A tasty chicken pot pie cooking in the oven is a great thing. Definitely a comfort food!

A great homemade chicken pot pie is great, but is very costly in time. Cutting up all those veggies is time consuming. These 2 recipes offer quicker versions without compromising great taste. A lot of people haven't tried cooking with a deep dish pie pan yet. These chicken pot pie recipes work great with deep dishes. You can add more veggies (like a can of cubed potatoes) if you want, or more meat. It depends on you and your family in how you like your chicken pot pie to taste.

Easy Chicken Pot Recipe

Ingredients:

1 pound skinless, boneless chicken breast - cubed

1 bag frozen veggies (16 oz size)

1 low-sodium chicken bouillon cube

1/3 cup all purpose flour

1 tablespoon Mrs Dash (or other poultry seasoning)

1 3/4 cups low-sodium chicken broth (or the contents of one can)

2/3 cup milk or heavy cream

2 (9 inch) unbaked pie crusts (contents of one package of store bought pie crusts)

Note: If you are using a deep dish 9 inch round pan, you may want to add even more veggies!

Instructions

1. Preheat oven to 425 degrees F

2. In a saucepan, combine cubed chicken, frozen veggies, and bouillon cube. Add enough water to cover and boil for approximately 15 minutes. Remove from heat, drain, and set aside.

3. Place one of the pie crusts at the bottom of a 9 inch round pan and place on top of a baking sheet (easier to handle baking sheet than a round dish). Cook for about 7 minutes (pre-cooking the bottom layer prevents a "soggy bottom")

4. In a saucepan, combine broth, milk, and seasoning. Slowly stir in flour. Simmer over medium-low heat until thickened.

5. Pour chicken veggie mixture into bottom of pie crust. Pour hot broth milk mixture over chicken and veggies. Cover with top crust. Seal edges carefully and remove extra dough if necessary. Cut several slits or opening on the top of the pie crust to let steam escape.

6. Bake in the oven for about 30 minutes or until the top pasty is browned. Cool for about 10 to 15 minutes before serving.

Even Easier Chicken Pot Pie Recipe

Ingredients

1 can chicken meat - cubed or shredded

2 or 3 cans of mixed veggies

2 or 3 cans of cream of chicken soup

2 (9 inch) unbaked pie crusts (contents of one package of store bought pie crusts)

Instructions:

Note: Depending on whether you are using a typical 9 inch round pan or a deep dish pan, you may need to add in more mixed veggies or chicken soup. Also, if you prefer your pot pie to be more creamy, add more soup.
