Sweet Potato Casserole Fast And Easy

Another Easy Sweet Potato Casserole Recipe
This recipe is not just for Easter, Mother's Day, Thanksgiving and Christmas holidays but can and should be enjoyed quite often. This is one of our family favorites.
You will need:
3 cups sweet potatoes, cooked, mashed (about 2 large sweet potatoes, peeled)
Or you may use canned sweet potatoes
1/4 cup molasses
2 tablespoons olive oil
4 eggs, or equivalent egg substitute
1/4 cup light rum
1/4 teaspoon of cinnamon
salt to taste (optional)
Peel and bake your sweet potatoes in the oven appox. 45 mins. to an hour, or until done. If you prefer, cut in small and medium pieces and cook them in skillet with about 3/4 cup of water on medium until done. Should yield 3 cups
Combine the 3 cups sweet potatoes with all of the other ingredients. Beat well by hand or with an electric mixer. Place mixture into a 2 quart baking dish, sprayed with non-stick cooking spray.
Bake for 45 or 50 minutes. When the casserole is done a knife inserted in the center should come out clean The casserole will be firm and golden.
