Chicken Soup for a Rainy Day

That time of the year came when the rain is pouring outside and you want something hot and tasty to heat yourself. What can be better than a chicken soup? I can tell you it is definitely my favorite dish for such rainy and chilly days.

I love spending time in the kitchen and trying new recipes. However, an easy to make dish is always welcomed. This is the case with this delicious chicken soup.

Ingredients

  • 1/2 kilo chicken breast
  • 1 big onion
  • 2 carrots
  • 1 parsnip
  • soup noodles
  • parsley
  • salt & pepper

Preparation

  1. Peel the onion, cut the carrots and the parsnips in small cubes and put them boil together with the meat.
  2. When the meat is boiled, take it out, let it cool a bit, then cut it into small pieces and add it back into the soup.
  3. Take the onion out and add the noodles, salt, pepper and the parsley.
  4. Let it boil until the noodles are done.
  5. Good appetite!

Tip to Make Kids Love Chicken Soup

Even if it is not your child's case, I am sure you know at least one example of kid who doesn't want to eat anything except pasta and chips.

Well, there is a trick invented in Israel that makes kids eat their soup without nagging about it. It's called "soup almonds". They are a sort of mini croutons that remain crunchy after being dipped in the soup.

      I love adding lots of "stuff" to my soup...i.e. barley, tiny potatoes, green beans, rice, roasted veggies, etc. and not all but pick and choose depending on the soup base. Wishing you lots of luck in the January Food Club Contest :)
