This Rotini pasta recipe is a burst of colour, flavor and nutrition! I prepared this dish especially for Lent and those persons, like me, who observe the Lenten season. It is especially suited for Fridays during lent, when Catholics fast from eating meat. But this pasta dish can also be used by vegans and vegetarians as an ordinary meal any time of the year.

The rotini pasta that I have used in this recipe comes in a mix of 3 colours – white/cream, reddish-orange, and green. The colours are vegetable based, in that the green pasta is as a result of spinach being added and the reddish-orange pasta is as a result of tomatoes being added.

I love vegetables! So as you will see, I have combined ‘Caribbean’ sun-ripened tomatoes (just boasting a little), cucumbers and sweet peppers with this pasta recipe giving it added colour and flavor.

I have a bit of a sweet tooth, also. So I have added a few raisins as a natural sweetener. I am also a pesca-ova vegetarian, so I have added a little bit of flaked tuna for those vegetarians who eat fish. This is a bowlful of healthy that you will most definitely enjoy eating!

Additionally, it can be used as a hot dish or as a cold dish. To use as a cold pasta salad, just place it in the refrigerator to chill for about 30 minutes before serving.

  • Cook time: 10 min
  • Ready in: 15 min
  • Yields: 2 persons

Ingredients

  • 100 g Tri-Color Tomato-Spinach Rotini Pasta
  • (1/4) teaspoon of Salt
  • (1 1/2) teaspoons of Mayonnaise
  • 3 dots of Mustard
  • 30 g (or 3 teaspoons) Flaked Tuna (optional)
  • 3 small Tomatoes (diced)
  • (1/3) of a medium Cucumber (diced) (green & red one if you can get it)
  • (1/3) of a large Sweet Pepper (diced)
  • A few raisins (as a natural sweetener)

Instructions

  1. Place 2 cups of water in a pot along with the (1/4) teaspoon of salt and bring to a boil.
  2. Add 100 g Tri-Color Tomato-Spinach Rotini Pasta to the boiling water.
  3. Allow the pasta to boil for 12 minutes, stirring occasionally.
  4. While the pasta is boiling, mix together the Mayonnaise, Mustard and Flaked Tuna (optional) into a paste.
  5. Add the diced tomatoes, diced cucumbers, diced sweet pepper and raisins and mix together well.
  6. Remove the pasta from the fire and drain in a colander for about 2 minutes.
  7. Mix drained pasta with all of the other ingredients (tomatoes etc.).
  8. Pour into a serving dish.
  9. Then just enjoy and savour every bite!
