Teenage Party Appetisers

Devils On Horseback

Parties are a lot different now from when I was a teen in the 80's. Huge cans with four pints of beer in them called 'Party fours' were still around, but on the brink of being discontinued.

Someone always brought their old-man's home brew wine or beer and there were always someone running out of the kitchen with a bleeding hand from stabbing at the thick metal of the party seven (seven pints of beer in a can) with a hammer and screwdriver.

If you brought a bottle you were in, and being the UK It was easy to obtain booze your average corner shop keeper in those days couldn't tell if you were 16 or 18 and didn't care.

How things have changed!

Pool parties here in Spain are full of laptops and web-cams, so friends from around the world can observe in real time and digital shots from waterproof cameras posted on Tuenti and Facebook - also required water balloons, plenty of Tapas and cold drinks.

I like to include something totally alien to my teenage daughter and her friends in the way of food, after the initial face pulling the Devils on horseback went down a treat.

The menu is for thirty five presuming that only thirty will turn up and ten are on a diet - sad but true.

Double the ingredients to make more.

Cook time: 5 min

Yields: 8

Ingredients

  • 1 lb 8 oz / 700g Chicken Breasts Skinned and Boned.
  • 2 Medium Eggs
  • 3 oz / 75g Dried White Breadcrumbs
  • Salt and Ground Black Pepper
  • Oil
  • Flour For Dusting

Instructions

  1. Cut the Chicken into strips about 2" x ½ inch - 12mm x 5cm.
  2. Beat the eggs in a shallow dish with the seasoning.
  3. Scatter the breadcrumbs onto a large plate.
  4. Dip the chicken into the flour first, the egg and then the breadcrumbs, put to one side.
  5. Heat the oil in a deep fat fryer 350f / 180c
  6. Fry 6-8 strips at a time until golden.
  7. Remove with a slotted spoon and drain.
  8. Check that the chicken is cooked by cutting one in half and if pink re-fry.
  9. Serve with dips.

Dip

Heat 2 TBLS olive oil in a pan. Sauté 2 chopped onions, 2 crushed garlic cloves and add 1-2 TBLS of curry powder. Cook for 1 minute and add 1lb 12 oz -800g chopped tinned tomatoes and 2 TBLS of apricot jam. Bring to the boil then simmer for 30 minutes until thickened. Blend and serve.

Red and Yellow Pepper Pizza

  • 1 Pint / 600ml Lukewarm Water
  • 2 lb / 900g Plain Flour
  • 4 TSP of Dried Yeast
  • 2 TSP Sugar
  • 3 TBLS of Olive Oil and some aside for greasing.
  • 2 TSP Salt
  • FOR THE TOPPING
  • 4 Onions - Chopped
  • 4 Garlic Cloves - Crushed
  • 2 TBLS Olive Oil
  • 2 bl 12oz- 1.2kg Chopped Tinned Tomatoes
  • 1 TBLS Chopped Oregano
  • 2 oz / 50g Butter
  • 2 Red Peppers Sliced
  • 2 Yellow Peppers Sliced
  • 12 oz / 350g Button Mushroom
  • 2 oz / 50g Black Olives
  • 140 z / 400g Mozzarella Grated
  • Salt and Ground Black Pepper

Instructions

  1. Stir together the flour, salt and olive oil. Blend the yeast, sugar and water in a jug and put to one side until it is frothy. Add to the flour to make a doe and knead for ten minutes.
  2. Grease a Bowl with the oil and place the dough in and cover with oiled cling film and wait an hour for it to double in size.
  3. Preheat the oven gas mark 5 - 375F - 190c
  4. Oil 2 large roasting tins.
  5. TOPPING
  6. Heat the oil in a pan and sauté the onions until soft and add the garlic, oregano, tomatoes and seasoning - cook to form a pulp.
  7. In a separate pan melt the butter adding the peppers cook for a minute and add the sliced mushrooms cooking for a further 2 minutes.
  8. Knock back the dough and split into two pieces. Roll out and press into the roasting tins.
  9. Spread the tomato pulp and top with the peppers and mushrooms.
  10. Sprinkle on the mozzarella and scatter the olives.
  11. Bake for 30- 35 minutes. Cut into small squares and serve.

Steak Kebabs and New Potatoes

The amount of steak depends on how many Kebabs you want to make.

Ingredients

  • Steak.
  • New Patatoes.
  • Green and Red Pepper Cut into Small Chunks.
  • 1 Large Onion Cut into Chunks.
  • Soy Sauce.
  • Salt and Ground Black Pepper.

Instructions

  1. Add the seasoning to the Soy Sauce to use as the marinade.
  2. Marinate the Steak for 2 hours and cut into chunks and skewer, some with new potatoes and some with mushrooms, peppers and onion.
  3. Wash the potatoes and boil in a pan for 20 minutes skewer with the meat and pour on some of the marinade and grill at a high temperature for 5 minutes, turning.

Meat Balls in Tomato Sauce - This is the beef version not the Lamb

  • 1 Onion Chopped.
  • 1 Clove of Garlic Crushed
  • 4 Table Spoons of Olive Oil
  • 450 g/1lb Minced Beef
  • 2 Eggs Beaten.
  • 4 tbls Fresh Breadcrumbs
  • 1 tbls Freshly Chopped Parsley
  • 1 tsp Chopped Thyme
  • Salt and Ground Black Pepper
  • Flour for Coating
  • FOR THE SAUCE
  • 1 Onion Chopped.
  • 4 oz /100g Mushrooms Sliced.
  • 1 Small Red Pepper Diced.
  • 1 Small Green Pepper Diced.
  • 1 oz /25g Flour
  • 150 ml/1/4 PT Dry White Wine
  • 600 ml/1 PT Beef Stock
  • 400 g/ 14 FL OZ Chopped Tinned Tomatoes

Instructions

  1. 1.
  2. Sauté the onion and garlic in the olive oil until soft.
  3. Mix the mince Beef, eggs, breadcrumbs, parsley, thyme, and seasoning in a bowl.
  4. Add the onions and stir until thoroughly mixed.
  5. 2.
  6. Using your hands shape the mixture into walnuts size balls and coat in flour.
  7. 3.
  8. Heat the remaining oil in a pan and fry the meatballs turning them to seal evenly.
  9. Remove with a slotted spoon onto a plate.
  10. 4.
  11. The Sauce
  12. Add onion, mushrooms and green and red peppers to the pan and lightly fry for 2 minutes .
  13. Mix the flour in thoroughly.
  14. Over a low heat gradually add the wine, stirring well.
  15. Add the beef stock, tomatoes and seasoning.
  16. Mix and bring to the boil.
  17. Lower the heat and adding the meatballs and simmer for 40 minutes until the sauce has thickened.

Bacon Bites - Devils On Horseback

  • 1 LB 4 OZ / 575G Un-Soaked Prunes.
  • 3 -4OZ / 75-100G Whole Almonds.
  • 1 LB 8OZ / 700G Streaky Bacon.
  • 60 Small Cocktail Biscuits.
  • 1 LB / 450G Smooth Garlic Pate.

Instructions

  1. Slit the prunes and remove the stones.
  2. Blanch the almonds (scold briefly and remove the skins)
  3. Press an almond into the center of each prune.
  4. Remove the rinds from the bacon stretch with a knife and cut into 3, wrap around each prune and secure with cocktail sticks.
  5. Grill on a moderate heat for 4-5 minutes turning.
  6. Spread the cocktail biscuits with a little pate remove the cocktail sticks from the prunes and place the prunes on top of the biscuits, serve cold.

Ready in: 2 hours 5 min
Yields: Makes a 100

Mini Samosas - These can be made in advance of the party and then Frozen.

  • 2 Onions
  • Chopped.
  • 2 LB / 900G Lean Minced Beef.
  • 3 -4 TSP Ground Cumin.
  • 2 -3 TSP Ground Coriander.
  • 1 -2 TSP Cayenne Pepper.
  • 1 TSP Garam Masala
  • 3 Carrots
  • Grated.
  • 8 OZ / 225G Frozen Peas.
  • 1 -2 TBLS Chopped Fresh Coriander.
  • Salt and Ground Black Pepper.
  • 2 Packets of Filo Pastry (26 sheets approx).
  • 4 -5 OZ / 100- 150G Butter Melted.
  • Olive Oil for Frying.

Instructions

  1. Pour the Olive oil into the pan and sauté the onions until lightly golden.
  2. Add the minced meat fry until well browned.
  3. Stir in the cumin, coriander, cayenne and garam masala and fry on a higher heat for 1 minute add the carrots, peas, fresh coriander and seasoning.
  4. Stir and cover cooking for 15 minutes the mixture should have a fairly dry texture.
  5. Lay one sheet of the filo pastry on a board and brush with butter and lay another sheet on top brush with the butter again and cut into 8 strips.
  6. Spoon the mixture 1" / 2.5cm from the bottom edge and to the right of the pastry edge.
  7. Fold into triangles brushing with the melted butter. Repeat the process until all the ingredients are gone.
  8. Preheat the Oven gas mark 6 - 400F - 200c
  9. Place the Samosas on a butter greased tray and cook for 10 minutes until they are golden.
  10. Alternatively place in bags for freezing.
  11. After freezing - Preheat the Oven gas mark 5 - 375F - 190c Place the Samosas on a butter greased tray and cook for 20 minutes until they are golden.

Chicken Koftas

  • 2 LB / 900G Skinless Chicken Breast.
  • 6 Slices of White Bread.
  • 2 Eggs Beaten.
  • Juice of ½ a Lemon.
  • Salt and Ground Black Pepper.
  • 3 -4 TSP Medium Curry Powder.
  • Flour For Coating.

Instructions

  1. Blend the chicken until finely chopped.
  2. De-crust the bread and add to the chicken along with the eggs, lemon juice, seasoning and curry powder.
  3. By hand mix the ingredients until blended and form into small balls and cover lightly in flour and chill for 30 minutes.
  4. Heat ¼" / 6mm of oil in a pan and fry the balls in batches of 4 for 4-5 minutes until golden, drain and serve.

Dip

6 TBLS Mayonnaise, 4 TBLS Set Yoghurt, 2-3 cloves of garlic crushed.

Blend the Mayonnaise and Yoghurt. Stir in the garlic, Cover and Chill.

Spicy Sausage

  • 3 lb / 1.4 kg Cumberland Sausage in one length.
  • 3 tbs of Olive Oil.
  • The Topping:
  • 1 Onion - Finely Chopped.
  • 1 Clove of Garlic (optional).
  • 2 tbls of chilli Sauce.
  • 5 tbls of Tomato Juice.
  • 1 tbls of Lemon.

Instructions

  1. Preheat the Oven gas mark 5 - 375F - 190c
  2. Prick the sausage all over.
  3. Coat a large pan with some of the oil and spiral the sausage into the pan cooking on a low heat for 8-10 minutes until brown on the underside and remove from the heat and turn the sausage over.
  4. Blend the topping ingredients together and spread it over the sausage.
  5. Place the pan in the oven for 15 minutes or until golden on top.
  6. Slice into bite size pieces to serve.
  7. If you can't get a full length Cumberland then join several to curl in the pan.
