Tempting Tart Recipes

Updated on November 3, 2015

Lemon Tarts, Fruit Tarts, Chocolate Tarts... Easy Tart recipes for any taste bud!

Tarts are a delicious treat and are very impressive when served to guests at a party. They have been enjoyed since medieval times. Tarts can be either sweet or savory though sweet is more common. They are similar to pies except they do not have a top crust. This enables the chef to be creative with toppings and make a beautiful presentation. While they seem elaborate with the right tart recipe they're easy to make and fun to decorate. They happen to be my favorite dessert and I'd like to share some of my favorite tart recipes. The are easy tart recipes that are beautiful and tasty.

This recipe makes two tart crusts. You can pick two different fillings to experiment with if you'd like. If you only wish to make one tart the extra crust can be saved in the freezer.

  • Prep time: 1 hour
  • Cook time: 15 min
  • Ready in: 1 hour 15 min
  • Yields: 12

  • 2 1/2 cups all-purpose flour
  • 7/8 cup butter
  • 3/4 cup powdered sugar
  • 1 egg yolk
  • 1 1/2 tablespoons cold water

  1. 1. Process flour, butter, and powdered sugar in a food processor until mixture is small and crumbly. Add the egg yolk and water, and process until a dough forms. Mold the dough into 2 flat shapes and wrap each in plastic wrap. Save 1 in the freezer for the next time you make a tart. Chill the other for 20 minutes in the freezer.
  2. 2. Roll out the refrigerator dough until it's 1/8 inch thick (3mm), and line a 9 inch tart pan. Patch any cracks with extra dough from the sides. Then chill the crust for 20 minutes in the freezer.
  3. 3. Preheat oven to 350 degrees F (175 degrees C).
  4. 4. Place a piece of foil over the pastry and fill the foil with pie weights or some rice to keep the foil down. Bake in the preheated oven for 15 minutes. Remove the foil and weights or rice and continue baking until the pastry is a light golden color.

Tart Pans - These can also be used as a pie or quiche pan

Tart pans differ from pie pans in that they have the beautiful ribbed edge. Also most will have a bottom that drops out so it can be easier removed from the edging which gives a beautiful presentation of the tart. You can make several individual sized tarts with mini tart pans or one large tart.

  • Prep time: 15 min
  • Cook time: 30 min
  • Ready in: 45 min
  • Yields: 12

Lemon Tart Filling Recipe

  • 4 eggs
  • 3/4 cup castor sugar (if you don't have you can blend granulated sugar in a blender for several mins)
  • 2 tablespoons minced lemon zest
  • 3/4 cup fresh lemon juice
  • 1/2 cup cream

  1. 1. Preheat oven to 350 degrees F (175 degrees C).
  2. 2. In a medium bowl mix together eggs, castor sugar, lemon zest, lemon juice, and cream. Be careful not to over beat. Pour the mixture through a strainer. Place the tart pan on a baking sheet and pour the lemon mixture into the baked pastry crust.
  3. 3. Bake about 20 minutes or until the tart is almost set. The lemon filling should be runny in the center. It will set completely when cool. Do not over cook or cracks will appear. Cool then Enjoy!

A strainer helps to get that really smooth and delicious fruit tart filling.

Chocolate Tart Filling Recipe

  • 8 oz semisweet chocolate pieces
  • 1 cup heavy cream
  • 2 egg yolks

  1. 1. Melt chocolate and cream slowly in a double boiler over medium-low heat. Whisk until smooth.
  2. 2. In a small bowl, whisk the egg yolks. Slowly whisk a cup of the chocolate mixture into the yolks. Then whisk this chocolate-egg mixture back into the remaining chocolate until completely blended.
  3. 3. Pour chocolate mixture into the tart crust. Cool in the refrigerator until completely set. Once set bring to room temperature before enjoying.

Double boilers to melt chocolate

A double boiler is the best way to melt chocolate and have it come out correctly. Just melting chocolate in a pan tends to heat up the chocolate too quickly in certain spots and you won't get the best results. A double boiler will definitely help in your endeavor to make a delicious chocolate tart!

  • Prep time: 25 min
  • Ready in: 25 min
  • Yields: 12

Fruit Tart Filling Recipe

  • 1 (8-ounce) pack cream cheese softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • Choice of fruit or berries
  • 1 (6-ounce) can frozen limeade concentrate thawed
  • 1 tbs cornstarch
  • 1 tablespoon fresh lime juice
  • 1/4 cup granulated sugar

  1. 1. Preheat the oven to 350 degrees F (175 degrees C).
  2. 2. In a medium bowl beat the cream cheese, sugar, and vanilla together until smooth. Pour into the tart crust.
  3. 3. Arrange small pieces of your choice of fruit and berries in any design you like. Examples include strawberries, raspberries, kiwis, blackberries, blueberries and more. Have fun with this part.
  4. 4. In a small saucepan mix the limeade, cornstarch, lime juice, and sugar. Cook over medium heat until clear and thick, about 2 minutes. Let cool. Glaze the tart with a pastry brush until lightly covered. Enjoy!
