Thai Sweet Potato Bisque
Thai flavors are an exciting combination of rich and hearty ingredients that are surprisingly good together. This recipe incorporates earthy, vegetarian ingredients with a little bit of bite so that the flavor can linger - sweet potatoes, coconut milk, peanuts, and chipotle pepper.
This is a fabulous recipe for a quick Fall or Winter meal that will leave you satisfied and full, but not stuffed. The best part is that this can be made as one single serving. So it is perfect for those nights home alone, or you can double it if it's just the two of you. The preparation and cook time together will take no longer than 30 minutes, and if you've prepared the sweet potatoes ahead of time, then it could take as little as 5 minutes.

1 sweet potato
1 cup of coconut milk
2 teaspoons of peanut butter
1 teaspoon of garlic
salt and pepper to taste
chipotle pepper to taste
Preparing the potatoes can be done ahead of time or right before you're ready to eat.
Before you start them, get some water boiling in a small pot.
Then you will need to peel your potatoes and dice into small pieces. I usually cut them into dime or quarter sized pieces. The smaller the piece, the quicker they cook!
Once you have your pieces, add them to the water and boil until they are soft enough for a fork to slide through. When they are soft enough, drain them with a colander and add them to your blender.
This is what makes this recipe so simple - everything is added to your blender and mixed together!
Since your potatoes are already in the blender, you can start adding the rest of the ingredients. I use about 1 cup of coconut milk, which leaves the bisque pretty thick. If you would like a thinner texture, then you should add more coconut milk.
Next you should add the garlic, peanut butter, salt, pepper, and chipotle pepper.
Since the potatoes are already soft, you should have no problem blending everything. It should only take 1-2 minutes to create a well-blended bisque.

After all of the ingredients have been blended together, you will want to put them back into the pot you boiled the potatoes in and allow them to heat up for a couple of minutes. If the potatoes were still hot, you will not need to wait long. Then you're ready for the final step!
The Grande Finale
Once your bisque is heated enough, you can pour it into a bowl. I like to sprinkle some extra chipotle pepper and diced garlic as a garnish to make it look nice and add a little extra flavor.
