Another great features of these fryers is that the lid fits so nicely on the pot. There is a nice tight seal that the lids makes on the pot. The steam will escape only when the liquid is boiling hard. The interior of the lid is a bit unusual looking as it is neither flat nor smooth. It has an intriguing built in design of small cone-like protruding tips. So when steam condenses on the inside of the lid (as it will with any recipe with high heat), the resulting fluid falls along those protruding tips back into the pot (instead of dripping off the edge of the lid). No liquid escapes! Very clever design!
