Delicious, Foolproof Banana Cake Loaf Recipe

This is my favourite recipe for banana bread, passed from my Grandmother, to my mother to me and is wonderful for picnics. If you like, you can add sultanas, walnuts, chocolate chunks or mixed dried fruit to get the exact flavour you want, but try it plain first because it is honestly one of the best, yummiest snacks ever!

Prep time: 15 min
Cook time: 45 min
Ready in: 1 hour
Yields: 6-8

Ingredients

  • 3 ripe bananas
  • 1/2 tsp grated nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp mixed spice
  • 1 tsp salt
  • 1 egg, beaten
  • 2 cups flour
  • 1 cup granulated sugar
  • 1/4 cup butter

Instructions

  1. Start off by preheating the oven to 180 degrees/gas 4 and grease a 10cm x 30cm loaf tin
  2. In a large mixing bowl, cream together the butter and sugar
  3. Mash together the beaten egg and bananas and add this to the bowl
  4. Add the flour, salt and spices and mix lightly until combined, being careful not to over-mix as this will mean a heavier bread when it is cooked
  5. Pour the mixture into the tin and pop it into the oven for 1 hour
  6. If the top begins to brown too quickly, simple turn the heat down a little
  7. Once ready, allow the bread to cool for 20 minutes, then you can cut and serve it
