Turkey Italian Wedding Soup

If you like a good tasting wedding soup I have one for you that are super healthy and still have that Italian flavors and taste. Believe me when you taste my healthy version of this Italian wedding soup the next time you try to make it this will be your go to recipe.

Turkey Italian Wedding Soup

Ingredient

Turkey Meatballs

1pound of lean ground turkey

1/2 cup finely chopped onion

1 garlic clove, minced

1/4 cup of chopped fresh parsley

1 egg, beaten

1/4 cup whole-wheat breadcrumbs

2 Tablespoons of grated Parmesan

Soup

8 cups of lower sodium chicken broth

2/3 cup whole-wheat orzo

3 cups coarsely chopped escarole

Method

For the meatballs, in a large bowl combine beef, onion, garlic, parsley, egg, breadcrumbs, 2 tablespoons Parmesan, and pepper to taste; mix gently to combine. Form into 1-inch balls, and place on a baking sheet. Set aside. In a large pot bring broth to boiling. Add orzo and meatballs. Return to boiling; reduce heat to low. Simmer 8 minutes. Stir in escarole; cook 2 to 3 minutes more or until escarole is wilted and meatballs are heated through. Ladle soup into bowls, top with additional Parmesan if desired, and serve.

Make it a meal: Serve with whole-wheat dinner rolls and a mixed greens salad
