Vegan Butternut Squash Soup

Delicious Butternut Squash Soup - Comfort Food At Its Best

Fall brings beautiful cooler days, and splashes of color everywhere. And what better way to celebrate this time of the year with some equally colorful soup? This butternut squash soup will not only warm you up on those chilly days, but it's a breeze to make and it's absolutely delicious.

Use the abundance of fall to create this delicious comfort food your family will enjoy time and again.

Ingredients

  • 1 Medium onion
  • chopped
  • 3 Tablespoons of oil
  • 1 Butternut squash
  • cubed
  • 2 small potatoes
  • cubed
  • Salt to taste
  • Sprinke of black pepper
  • Dash of nutmeg

Instructions

  1. Start by sauteing your onion until translucent (about 10 minutes).
  2. While the onion is cooking, prepare your butternut squash and potatoes (peel and cube them).
  3. Add the squash and potatoes to the onions, cover with water (about 1" above the ingredients) and cook for about 20 minutes. Puree everything in the blender for 30 sec to a minute, return to the pot, add the spices and bring to a boil for another minute.
  4. Garnish with some chives, and even some roasted pumpkin seeds if you wish.
  5. Enjoy!

I can't even begin to tell you how much I enjoy my Vitamix!

Since we bought it, our family's been eating more fruits and vegetables, and my cooking is so much easier. I LOVE making smoothies and ice cream in the summer, and delicious creamed soups in the colder months.

Don't limit yourself to one recipe: experiment by adding things you love. Here are some examples I tried:

- add a few cloves of garlic for a little more zing

- roast the butternut instead of boiling it

- add celery cubes for a little bit of a crunch

- add some cinnamon

      Adriana, you have a hit here. I had a butternut squash and had heard about making soup for it, so I searched Squidoo and your recipe showed up first and I cam over. I have to admit I was a little skeptical about how creamy it could be without any cream...trust me, its rich creamy deliciousness. I had some left over mashed potatoes and used that instead of the two small ones and did add celery. I used my imagination and served it with a dollop of white cheddar and a grate of white cheddar for fun. You are right about this being a comfort food to be enjoyed again and again and so easy to prepare. I also added an extra dash of nutmeg...yummy and economical as well as nutritious!

      Sounds yummy to me. My wife makes great soup - usually from whatever happens to be lying around. I need to make sure that we have some butternut squash lying around in the near future I think.
