Vegan Cupcakes? Seriously?
I was introduced to the concept of vegan cupcakes when the book, was published. I was a new vegetarian at the time and not yet a vegan, but the title of the book was just silly enough to lure me in. I went ahead and tried the simple chocolate cupcake recipe with chocolate frosting and was completely shocked by how amazing they tasted. Everyone who tasted them said they were the best cupcakes they had ever tried! This is really shocking since I am not a baker. I am very proud of my cooking skills, but I'm not great at following recipes and love to improvise and that leads to frightening results when baking. The recipes were simple, and delicious and free of all animal products. No eggs, no butter, no animal fats!
Vegan cupcakes. What a concept!
Fast forward to today and I find myself baking vegan recipes all the time. Vegan cupcakes, vegan layer cakes, vegan breads, vegan pies, you name it. I'll do my best to share what I've learned on this lens and I hope you will enjoy it.
My Favorite Cookbook - Vegan Cupcakes Take Over the World
This book makes a fantastic Mother's Day gift!
I received this book as a Mother's Day gift some years ago and was hooked instantly. I generally describe myself as a great cook, not a great baker, but the recipes in this book are super tasty, the cupcakes are moist, delicious, and super healthy. Everyone who tries any of the cupcakes that I have made from these recipes simply loves them, regardless of whether they are vegan or not.

Vegan Buttercream Frosting
Buttercream frosting recipes are the easiest to make vegan. Simply replace the butter with a healthy vegan spread like Earth Balance and replace the milk with any vegan milk. I prefer using either coconut milk or vanilla flavored soy milk in my recipes.. Be careful to avoid margarine that uses hydrogenated oils.
Here is a simple recipe that I often use:
Vegan Buttercream Frosting
2/3 cup Earth Balance, softened
4 cups Powdered Sugar
1 teaspoon Real Vanilla extract
2 tablespoons Vanilla Flavored Silk Soymilk
Mix Earth Balance until light and fluffy.
Mix in Vanilla Extract
Slowly add in powdered sugar, while mixing
Gradually add Soymilk as needed to get the right consistency.
- Add 1/2 cup unsweetened cocoa to make chocolate frosting
- Add both 1/2 cup unsweetened cocoa and 2 teaspoons of instant coffee to make mocha frosting
A simple hand mixer is all you need to make tasty cupcakes with a nice fluffy frosting. I had a raggedy old hand mixer for years until I finally got this one for Christmas one year. I love it and would totally recommend it.
