Vegan Lemon Poppy Seed Pancakes

These pancakes taste absolutely delicious. They are not very difficult to make. It took me a couple of tries to get the hang of it. I found this recipe inside a zine I found in a box of books somebody was giving away. I was out for a walk last summer in Parkdale here in Toronto. I had just moved to this neighborhood and had been contemplating becoming a vegan. I picked up this zine. It had a simple recipe for banana pancakes which I adapted to make it a little bit more interesting. I have a lot of poppy seeds which have been here for a long time. I needed to find a use for them. This recipe was the result. I used olive oil to cook the pancakes in. I also used a bit of vegan margarine to add a bit of excitement to my breakfast.

These were very tangy and delicious. I would recommend them to anyone. They are even good for people who are not vegans. I used bananas in this recipe because it works as a binder to keep them from crumbling apart. I buy bananas and store them in my freezer so they will be handy. I use them in smoothies. These pancakes are something else they can be used in. They are very mushy when they are unthawed. This makes them easier to mix with the flour.

These are very simple to make. I cooked mine in an iron skillet. I use this for most of my cooking. I also found it in a box of items somebody in the neighborhood was giving away. I live a very simple lifestyle with limited income. Many people do not become vegans because they think it is going to be very expensive. It isn't very expensive, but it requires a great deal of creativity. This recipe is very creative. I like to make recipes up on the spot or adapt them from others ones I have found in cookbooks or online. We can often make a recipe with what we have on hand if we know proper substitutions. I didn't need to do that with this recipe. You might need to if you don't have much in your kitchen.


  • 1 Cup of Whole Wheat Flour
  • 2 Teaspoons of Baking Powder
  • A pinch of salt
  • 2 Bananas
  • 1 Cup of Vanilla Soy Milk
  • 1 Tablespoon of Stevia
  • Juice of 4 Lemons
  • 2 Tablespoons of Poppy Seeds
  • 1/4 Cup of Olive Oil


  1. Mix all of the dry ingredients in a large bowl.
  2. Mash up the banana.
  3. Add the wet ingredients.
  4. Heat olive oil thoroughly.
  5. Spoon out small portions of the batter into frying pan.
  6. Flip when edges are brown. Be careful to not let them burn.
  7. Serve with maple syrup or jam.
