Veggie korma with a dash of cream

Vegge Korma


Vegetable korma is an wonderful Indian dish which is liked in every part of the world we can make certain changes into it according to the taste some people love it with coconut grates sprinkled on it some with onions and some with dash of cream

Ingredients used to make korma

5 to 6 small chunks of broccoli

8 to 10 Small chunks of cauliflower

1 carrot cut length wise or chunks

1 cup peas(optional) according to season availability

Handful of beans cut in small pieces

1 green capsicum ,1 yellow capsicum and 1 red capsicum cut in cubes throw away the seeds

2 onions chopped/ one cup spring onions if available

Small piece of ginger

4 cloves of garlic

1 cup tomato puree or 2 tomatoes cut into small cubes

1 tsp coriander powder(roasted to give pleasing smell)

2 tsp roasted and grounded cumin seed (roasted)

1 or 2 tsp garam masala powder(optional if you do not eat spicy do not put)

1 tsp red chilly powder(optional)use black pepper powder

1-2 tbsp butter oil

50 grams grated khoya (thickened milk)

1 1/2 tsp salt or to taste

Chopped coriander leaves and 2 green chilly seeds removed

2 cloves crushed to powder(remove their heads)

Method of making

Cut all the vegetables into small pieces
grate the onion, ginger and garlic on the grater
Put oil into a cauldron and add onion, ginger and garlic paste.ยท Cook till the paste turns pink do not over fry it looses its taste.
Add the tomato puree or cubed tomatoes and cook till the oil is released
Add cumin powder ,(hot)garam masala optional) powder,coriander powder and red chilly (optional)powder/black pepper powder. stir well.
Add all the chopped vegetables (add paneer (cottage cheese)later else it will scatter) and stir again.
Cook for 10 to 15 minutes on low flame .
Keep stirring in between to avoid setting it down on the base of the pan
add the scrambled khoya and paneer(home made cheese). Mix well again
Cook for another 10 to 15 minutes on low flame when it starts simmering remove it from the flames .
Garnish with chopped coriander leaves, green chilly(seeds removed). onions and mint leaf as dressing and scrambled khoya (thickened milk pre settled to make home made khoya )or you can buy it from the market.pour some home made cream before serving .
